VEGETARIAN STUFFED ZUCCHINI



Vegetarian Stuffed Zucchini image

Number Of Ingredients 14

2 medium zucchini squash
3 tablespoons extra virgin olive oil, divided
½ cup sweet onion, diced
1 tablespoon fresh garlic, minced
1 cup sweet red bell pepper, ½ inch diced
1 cup Crimini (Baby Bella) mushrooms, ½ inch diced
1 teaspoon dried oregano (or twice that of fresh)
1 teaspoon dried basil (or twice that of fresh)
2 tablespoons fresh flat leaf parsley, chopped
½ kosher teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup plain panko bread crumbs
¼ cup Parmesan cheese grated, plus additional grated Parmesan to sprinkle over cooked squash
2 tablespoons Romano cheese, grated

Steps:

  • Preheat oven to 375 degrees F.
  • Line a small sheet tray or baking dish with foil or parchment paper.
  • In a large skillet or frying pan heat 2 tablespoons of the oil over medium heat. Add onion and cook two minutes. Add garlic, red pepper, mushrooms and cut up zucchini tops. Mix to combine and sauté two more minutes.
  • Remove from heat, pour into a large bowl and mix in oregano, basil, parsley, salt, pepper, panko crumbs and both grated cheeses.
  • Divide the filling between each zucchini boat by pressing the filling into each squash over the bowl forming the top in a rounded shape with your hand.
  • Place onto the prepared dish or pan and drizzle the remaining olive oil over the tops.
  • Bake for 35 - 40 minutes uncovered until slightly browned on top. Do not overcook, otherwise the zucchini will start to sag and the filling will not stay in.
  • As soon as they come out of the oven, sprinkle the tops with additional Parmesan cheese and serve.

Here's a delicious way to solve the problem of those too-big zucchinis ballooning in your garden at the end of the summer: zucchini boats baked and stuffed with lamb, feta, pine nuts, tomatoes, and more. It's just like your mother used to make, but with an exotic Mediterranean twist!

1 extra large zucchini, halved lengthwise
1 tablespoon olive oil
1 sweet onion, chopped
1 tablespoon chopped garlic
1 pound ground lamb
coarse salt to taste
ground black pepper to taste
1 (16 ounce) can tomato sauce
2 tomatoes, chopped
¾ cup crumbled feta cheese
½ cup pine nuts
¼ cup mint leaves
¼ cup water
¼ cup mint leaves
¾ cup seasoned bread crumbs
¾ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Use a melon baller to separate and remove seeds and pulp separately from the zucchini, carving out each half and leaving about a half-inch shell. Chop zucchini pulp into pieces about 1/4 inch in diameter. Discard seeds.
  • Heat olive oil in a large skillet over medium heat. Cook and stir onion and garlic in hot oil until tender, about 5 minutes. Add ground lamb; continue to cook and stir until lamb is lightly browned, 5 to 7 minutes. Stir chopped zucchini into the lamb mixture. Reduce heat to medium-low. Simmer mixture until the zucchini is hot, about 3 minutes. Drain excess grease. Season lamb mixture with coarse salt and black pepper.
  • Remove skillet from heat. Stir tomato sauce, tomatoes, feta cheese, pine nuts, and 1/4 cup mint leaves through the lamb mixture; spoon into the zucchini halves. Put stuffed zucchini halves into a large baking dish. Pour water into the baking dish.
  • Bake in preheated oven for 30 minutes. Mix bread crumbs and mozzarella cheese in a bowl. Sprinkle 1/4 cup mint leaves over the zucchini and top with the bread crumb mixture. Continue baking until the top is crusty and browned, about 10 minutes more.

1-1/2 pounds lean ground beef (90% lean)
1 large onion, chopped
1 large green pepper, chopped
1 jalapeno pepper, minced
1-1/4 cups soft bread crumbs
1 large egg, beaten
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 teaspoon salt
1/8 teaspoon pepper
2 cans (8 ounces each) tomato sauce, divided
2 medium tomatoes, coarsely chopped
4 medium zucchini
2 cups shredded mozzarella cheese

Steps:

  • In a large bowl, combine first 11 ingredients and 1 can of the tomato sauce; mix well. Stir in tomatoes. Halve zucchini lengthwise; scoop out seeds. Fill with meat mixture; place in two 13x9-in. baking dishes. Spoon remaining tomato sauce over each. , Bake, uncovered, at 375° until the zucchini is tender, about 45 minutes. Sprinkle with cheese during the last few minutes of baking.

ENOKI-STUFFED ZUCCHINI RECIPE

2 medium zucchini - (abt 8 oz ea)
2 tablespoons minced onion
2 tablespoons butter or margarine
1 package enoki mushrooms - (3.5 oz) rinsed, trimmed, and separated
1/4 cup bread crumbs
2 tablespoons grated parmesan cheese
1 teaspoon lemon juice
1/4 cup shredded mozzarella cheese
Paprika for garnish

Steps:

  • Wash zucchini. Cut off ends, but do not pare. Leave zucchini whole and cook in 1 inch boiling salted water 5 to 7 minutes. Drain. Halve zucchini lengthwise. Remove pulp with a spoon and chop into small pieces. Saute onion in butter until tender. Add to zucchini pulp with enoki mushrooms, bread crumbs, parmesan cheese and lemon juice, tossing lightly with a fork. Fill zucchini shells with mixture and arrange on broiler pan. Sprinkle with mozzarella cheese and paprika. Broil 5 to 7 minutes until golden. This recipe yields 4 servings.
