I found this recipe in THe Pilsbury Family Christmas Cookbook. This has quickly become a family favorite. It doesn't have eggs in the dough like most cookie recipes, so if you or a loved one likes to eat the dough, it's safe. We always put these on our Christmas cookie baking list. They're easy to make and sinfully delicious.

1/2 cup powdered sugar
1 cup butter or 1 cup margarine, softened
1 (3 1/2 ounce) package vanilla instant pudding mix
2 cups all-purpose flour or 2 cups unbleached flour
1 tablespoon milk
1 teaspoon vanilla
3 (3/4 ounce) chocolate coated english chocolate-covered english toffee bars, crushed (I use about 1/3 of a package of the skor bar pieces, found by the chocolate chips in the grocery sto)
powdered sugar (for coating the cookies after baking)

Steps:

  • Heat oven to 325 degrees.
  • In a large bowl, beat powdered sugar, margarine and pudding mix until light and fluffy.
  • Lightly spoon flour into measuring cup; level off.
  • Add flour, milk, vanilla, and crushed toffee bars, mix well.
  • Shape dough into 1-inch balls.
  • Place onto ungreased cookie sheets.
  • Bake at 325 for 13-18 minutes or until edges are a light golden brown.
  • Remove from cookie sheets; cool completely.
  • Dip top of each cookie into powdered sugar.

1 cup toffee pieces
1/2 teaspoon salt
1/2 cup chopped pecans, toasted
1/2 cup dark brown sugar, packed
2 cups biscuit mix
1/2 cup light brown sugar, packed
1 teaspoon vanilla powder
1/2 cup chocolate chips

Steps:

  • Layer first 3 ingredients in one quart wide mouth jar, packing each layer firmly.
  • Layer one cup biscuit mix, brown sugar, salt, vanilla powder and remaining biscuit mix on top.
  • Fill any remaining space with chocolate chips, secure lid and attach following instructions --
  • INSTRUCTIONS:.
  • combine mix, 1/2 cup melted butter and one large egg in a medium bowl.mix well.
  • Shape dough into 1" balls.
  • Arrange on greased cookie sheet.
  • Bake at 375* for 10-12 minutes.

Yield about 2 pounds.

1 tablespoon plus 2 cups butter, softened, divided
2 cups sugar
1 tablespoon light corn syrup
1/4 teaspoon salt
1 cup milk chocolate chips
1 cup chopped pecans

Steps:

  • Grease a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a large heavy saucepan, melt the remaining butter. Add the sugar, corn syrup and salt; cook and stir over medium heat until a candy thermometer reads 295° (hard-crack stage). Quickly pour into prepared pan. Let stand at room temperature until cool, about 1 hour. , In a microwave, heat chocolate chips for 30 seconds; stir. Repeat until chocolate is melted and smooth. Spread over toffee. Sprinkle with pecans. Let stand until chocolate is set, about 1 hour. Break into bite-size pieces. Store in an airtight container at room temperature.

2/3 cup(s) toffee chips 2/3
1/2 cup(s) chopped pecans, toasted and cooled completely
1/2 cup(s) packed dark brown sugar
1 cup(s) buttermilk biscuit and baking mix, i use bisquick
1/2 cup(s) packed light brown sugar
1 cup(s) buttermilk biscuit and baking mix

Steps:

  • Instructions for layering ingredients: In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed. If there is any space left after adding the last ingredient, add more baking chips, dried fruits or nuts to fill the jar
  • Place lid on top. Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with a rubber band, then ribbon or raffia. Decorate as desired.
  • Note: When measuring brown sugar, crumble it between your fingers for uniform texture. Be sure to pack the brown sugar firmly in the jar to prevent the baking mix from sifting down through it.
  • Make a gift card to attach as follows: "Empty contents of jar into medium bowl. Stir in 1 stick of butter or margarine, melted; 1 egg, and 1 teaspoon vanilla until well combined. Shape into 1-inch balls. Place on baking sheets coated with cooking spray. Bake at 375 degrees for 10 to 12 minutes or until cookies are light golden brown. Makes 2-1/2 dozen cookies
  • "To make cookies as bars: Empty contents of jar into medium bowl Stir in 1 stick of butter or margarine, melted; 1 large egg, and 1 teaspoon vanilla until well combined. Press into an 8x8-inch baking pan coated with cooking spray. Bake at 350 degrees for 20 to 24 minutes or until bars are light golden brown and center is almost set Makes 16 bar cookies."

powdered sugar

Steps:

  • 1. Preheat oven to 325 degrees. In a large bowl, cream powdered sugar, vanilla, instant pudding and butter. Lightly spoon flour into measuring cup, level off. Stir flour, milk, vanilla and crushed candy bars into creamed mixture; mix well. Shape dough into 1-inch balls. Place on ungreased cookie sheets and bake in 325 degrees oven for 13-18 minutes or until edges are light golden brown. Cool. Dip top of cookie in powdered sugar, Makes 6 dozen.
