ASPARAGUS AND ENGLISH PEA CASSEROLE
An old recipe of my grandmother's. Salt and pepper the vegetables to taste as you are layering them if desired.

- In a greased casserole dish, layer half of the peas, asparagus cuts, mushrooms, soup, cracker crumbs, and cheddar cheese.
- Repeat layers.

ENGLISH PEA CASSEROLE
Very easy and tasty. To reduce carbs, rinse English peas with cold water and replace butter crackers with a sleeve of saltines. Can also add a small can of drained mushrooms for more flavor.

Steps:
- 1. Preheat oven to 350 degrees. Mix peas, pimientos, and celery soup.
- 2. Pour mixture into greased 1 1/2 qt. casserole dish, cover with cheese.
- 3. Mix melted butter and crushed crackers. Spread over top.
- 4. Bake until bubbly. About 30 minutes
ENGLISH PEA CASSEROLE
Steps:
- Preheat oven to 350°F. Chip bacon and fry until crispy. Drain on paper towel.
- Drain the peas and pour into an 8 x 12-inch casserole dish. Drain the corn and spread over the peas.
- Mix together the onion, bell pepper, pimento, water chestnuts, soup, sour cream, bacon, and cheese. Stir until well mixed. Spread over the peas & corn.
- Melt the margarine in a medium size bowl, add the crushed crackers, and stir until crackers are all moistened. Spread the cracker/margarine mixture evenly over the top of the casserole.
- Bake for 35-40 minutes, or until golden brown.

- Cook peas for 5 minutes.
- While peas are cooking, saute celery, onions and water chestnuts in butter.
- Add cream of mushroom soup, milk and peas to above saute ingredients.
- Put in a 9x12 pan and top with buttered breadcrumbs.
- Bake at 350 degrees for 30 minutes.
