1 (14 ounce) can pizza sauce
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package sliced pepperoni
1 (4 ounce) link cooked Italian sausage, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange English muffin halves, cut-side up, on a baking sheet. Spoon 1 to 2 tablespoons pizza sauce onto each English muffin; top with mozzarella cheese. Place pepperoni slices on 1/3 the pizzas and Italian sausage on 1/3 the English muffins, leaving the remaining 1/3 with just cheese.
  • Bake in the preheated oven until cheese is melted, about 10 minutes.

1 cup Alfredo sauce
2 to 3 cups fresh baby spinach
4 English muffins, split with a fork and toasted
1 teaspoon Italian seasoning
2 rotisserie chicken breasts, shredded (2 cups), at room temperature
2 cups shredded mozzarella

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the Alfredo sauce in a pot over medium-low heat and let it come to a simmer. Add the spinach and stir until just wilted; turn off the heat.
  • On each toasted muffin half, spread 1/4 cup Alfredo sauce, a sprinkle of Italian seasoning, a portion of the chicken and some mozzarella. Bake on a baking sheet until the cheese is melted, about 5 minutes. Serve warm.

¼ cup shredded Parmesan cheese

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a pot of water to a boil. Cook kale and garlic in the boiling water until kale is softened, about 5 minutes. Drain and rinse kale and garlic under cold water, reserving the boiling water.
  • Blend kale, garlic, Parmesan cheese, and about 1 tablespoon of the boiling water in a blender until smooth; add more water as needed to thin the pesto.

1 tablespoon chopped fresh basil (or more if you are like me)

salt and pepper
1 tablespoon olive oil
2 teaspoons lemon juice
1 teaspoon clear honey

  • Toast muffin halves uner broiler until golden, about 2-3 minutes
  • Mix garlic, butte and basil together and spread on each muffin half.
  • Cut cross shape in the base of each tomato and plunge into bowl of boiling water. After a few minutes, pick up tomato with a fork and peel away skin.
  • Chop tomato flesh and mix with tomato paste and olives.
  • Divide mixture between muffins.
  • Mix dressing ingredients and drizzle over each muffin. Arrange mozarella slices on top and season with salt and pepper.
  • Return muffins to broiler for 1-2 minutes, or until cheese melts.

So why are you even looking at this recipe?! It's the worst! My husband and I were talking about how even bad pizza just isn't that bad. He remembered his mom making the box of Chef Boyardee pizza and it being pretty bad. I said I could top that... my mom would make pizza with english muffins and ketchup.
