EMERIL'S BOURBON BRAISED CHICKEN AND APPLE SAUSAGE WITH ONIONS
Found this recipe on the back of a pkg of Emeril's sausage. Thought it was yummy. Have made it without thyme springs and it was still yummy.

Steps:
- Heat medium-size skillet over low heat for 30 seconds.
- Melt 2 tablespoons butter and add onions and brown sugar.
- Cook, stirring occasionally for 20 minutes until onions are partially browned. Season with salt and pepper, and place thyme sprigs in skillet.
- Add sausage whole and cook, stirring occasionally until sausage is browned, about 15 minutes.
- Add chopped garlic and cook, stirring for 2 minutes.
- Add beer; reduce heat and cook, covered for 15 minutes.
- Remove pan from heat and stir in remaining butter and boubon.
- Remove thyme springs before serving.
- Serve sausages and onions in toasted French or Hoagie roll with Emerils Kicked up Horseradish mustard.
WRAPPED CHICKEN AND APPLE SAUSAGES WITH SWEET MUSTARD
These are so good! My sister loves these and the sauce even though she doesn't like mustard. We sometimes refer to these as Fancy Pigs in Blankets. You can slice these after baking and serve them as an appetizer, or you can serve them the way they are out of the oven for a snack, or serve with baked beans and a salad for dinner.

Steps:
- In a medium sized bowl add red currant jelly; stir jelly until smooth consistency (not lumpy). Add Dijon Mustard to jelly and stir until smooth and well blended. This is the Sweet Mustard Dipping sauce, refridgerate until ready to serve with the sausages.
- Cut each sausage link in half lengthwise. In medium non-stick skillet, cook sausages over medium high heat until lightly brown on each side. Browning the sausage isn't absolutely necessary but it helps cut down some of the greasiness after baking in so the crescent rolls don't slide off.
- Preheat oven to 350°F.
- Open tube of crescent rolls and separate each roll (into triangles).
- Place a browned 1/2 sausage link on each triangle and roll up; so the crescent roll is wrapped around the 1/2 sausage link. Place on an ungreased cookie sheet. Repeat with the rest of the sausages and crescent rolls. Top the crescent rolls and sausages with sesame seeds.
- Bake sausages wrapped in crescent rolls at 350°F for 17 minutes or until the crescent roll is golden brown.
- Serve with sweet mustard dipping sauce.

BEER BRAISED CHICKEN, SAUSAGE AND ONIONS
This is simple comfort food. And the best part it takes no time and is very easy. Just slow cooked on your stove or you can finish in the oven which I do in my cast iron skillet. It is just chicken sausage links and onions ...slow cooking. Serve this with some roasted potatoes that I slightly mash in a big bowl, topped with the chicken, sausage, onions and juice and some crunchy bread to soak up all the juices. What more could you want. NOTE: I use chicken thighs and chicken breasts ... but if you want to use a whole cut up chicken, that is fine. You can you any combination you want. I prefer bone in skin on but you can use whatever you enjoy best.

- Chicken -- I like rub the chicken with 1 tablespoon olive oil and then coat with the salt, pepper, and allspice.
- Saute -- Then in a large dutch oven (I happen to have a deep cast iron skillet) but I like to transfer to the oven, so use something deep for either the stove or something you can transfer to the oven to finish cooking. Add the oil and cook 1/2 of the chicken skin side down on medium high heat. Remove and set to the side and then cook the other 1/2. You don't want to crowd the pan as they cook. You just want to cook the chicken until all the skin and chicken is golden brown. Then lastly add the sausage pieces and once again, cook until golden brown and remove to the plate with the chicken.
- Onions -- Add the onions to the pot (on medium high) and saute a few minutes, 3-4 is all they take until they soften. Then stir in the brown sugar and reduce to medium low and cover until golden brown, stirring occasionally. This will take about 5-8 minutes.
- Sauce -- Add in the flour and cook 1 minute to mix in with the onions and then add the bay leaf, mustard, broth, and beer and bring to a boil. Reduce to low and arrange the chicken in pot in one layer. Don't forget to pour in any juices from the plate too. Good Stuff! Now if you can, transfer to the oven and cook at 375 uncovered, or you can continue to cook on the stove top on low to medium low also uncovered, but the oven to me gives it a better taste. It takes about 40 minutes until the chicken is falling all the bone.
- Serving -- I like to take some roasted potatoes and put in the bottom of a bowl and slightly mash with a small fork. Then top with the chicken pieces and some of the sausage and onions and juice. A nice slice of toasted bread and a small salad. How much more comfort food can you get.

HOMEMADE CHICKEN AND APPLE SAUSAGE
I got this recipe from my mom's Joy Of Cooking book. It is very easy, and only has half the fat of regular sausage! Also, you know what's in it (no lips and hooves)! To me, that is a major plus!

- Boil cider down to 2 or 3 tablespoons syrup in a small saucepan.
- Remove the bones from the chicken thighs, leave the fat on.
- Cut into 1" dices.
- Coarsely chop in food processor with dried apples.
- Mix the syrup, chicken and apple mixture with remaining ingredients, and squeeze the mixture with your hands until well blended.
- Will be a little sticky.
- Mold into patties and cook over medium heat until done, turning once.
- Use immediately or freeze for up to 2 months!

BRAISED CHICKEN WITH APPLES AND SAGE
Steps:
- Pat chicken dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken well, starting with skin sides down and turning over once, 10 to 12 minutes total. Transfer chicken to a plate and pour off all but 1 tablespoon fat from skillet.
- Add butter, brown sugar, apples, and shallots to fat in skillet and cook over moderate heat, stirring occasionally, until apples are browned, about 5 minutes.
- Add broth, vinegar, and sage and deglaze skillet by boiling, stirring and scraping up any brown bits, 1 minute. Return chicken, skin sides up, to skillet along with any juices accumulated on plate. Reduce heat and simmer, loosely covered with foil, until chicken is cooked through and sauce is slightly reduced, 20 to 25 minutes.
CHICKEN APPLE SAUSAGE, KALE, AND RICE SOUP
I had some leftovers in my fridge and needed to make a quick, nutritious lunch for my son who was not feeling well. I managed to get enough mileage from these ingredients for a family of four to eat lunch off of..woohoo! It was very yummy, soothing, healthful, economical, and low in Weight Watcher points (2 points per serving to be exact, 10 points for the whole pot)..double yay!

- fincely dice the onion, carrot, celery, and garlic cloves. I actually put all of these veggies minus the celery in my Vitamix on the #4 variable setting (check the manual for further instructions) and it makes quick work of them. I cut the celery by hand though.
- Meanwhile, heat the oil in a soup pot over medium high heat.
- Add the veggies to the oil and stir. Cook until veggies are softened.
- Add herbs de provence, stir. Turn the heat down if necessary to prevent the veggies from over cooking.
- Dice the sausage. I use precooked sausage. If yours is raw, you will need to cook it first (I think.I haven't made it with raw sausage). I cut the sausage lengthwise into 8 strips and then cut across to make a small dice. Add to the veggies and cook for a few minutes -- allowing the juices in the sausage to come out and permeate the mix.
- Add 4-5 cups of chicken broth. I added a whole container of the boxed broth. Bring to a boil.
- While waiting for the soup to boil, take the stalk out of the kale leaves and chop the leaves into small bits. Add to the boiling soup. Add the rice. Cover and simmer for another 15-20 minutes. Add salt and pepper to taste.
