What makes the perfect breakfast cookie? I've determined that people like a low-sugar cookie. They also really like oatmeal. As far chocolate? Less is more. These breakfast cookies are easy to make, assemble and serve-and are definitely not your average oatmeal-and-raisin cookies.

Yield about 12 cookies

Number Of Ingredients 7

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

2 teaspoons vanilla extract
3 ripe bananas
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Stir together the butter, brown sugar, white sugar, peanut butter, and vanilla in a bowl. Mash the bananas into the mixture until there are few lumps. Sift together the flour and baking powder in a separate bowl; add to the banana mixture and stir until thoroughly incorporated. Drop rounded tablespoons of mixture onto the prepared baking sheet.
  • Bake in preheated oven until lightly brown and firm, about 10 minutes.

Nonstick cooking spray
3 cups sugar
2 sticks (1 cup) butter, softened
1 cup peanut butter (crunchy or smooth, your call)
2 tablespoons molasses
1 tablespoon pure vanilla extract
Big pinch of baking powder
2 teaspoons kosher salt
3 very ripe bananas
2 1/2 cups all-purpose flour
1 1/4 cups chocolate chips
5 ounces pretzels, smashed (about 3/4 cup pretzel crumbs)
10 bacon strips, cooked crisp and chopped fine

Steps:

  • Preheat the oven to 350 degrees F and spray a baking sheet or sheets with cooking spray.
  • In a big bowl, mix the sugar, butter, peanut butter, molasses, vanilla, baking powder and salt until it's all one color. Add the bananas and mash them up real good in there.
  • Add the flour and gently mix until incorporated, with no lumps.
  • Fold in the chocolate chips, pretzel pieces and bacon.
  • Using two spoons, form balls about the size of a large walnut and drop them on the prepared baking sheet(s) at least 2 inches apart. Place the sheet(s) in the fridge to chill for 10 minutes.
  • Bake for 12 minutes, or until golden on the outside and super gooey in the middle, just like the King would want them. Let cool on a wire rack off the baking sheet.

¼ cup + 2 tablespoons mashed, very ripe bananas (about 1 medium banana)
¼ cup natural, unsalted creamy peanut butter
1 tablespoon pure maple syrup
1 tablespoon melted coconut oil
1 flax egg (1 tablespoon golden ground flaxseed + 3 tablespoons water, whisked together, set for 15 minutes)
½ teaspoon pure vanilla extract
1 cup rolled oats
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ cup sugar-free mini chocolate chips
¼ cup peanuts, finely chopped
1 tablespoon each: sugar-free mini chocolate chips and peanuts, finely chopped

Steps:

  • Preheat oven to 325°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a large bowl, add peeled bananas. Using a sturdy whisk or fork, mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax eggs and vanilla. Whisk until well incorporated.
  • Add the dry ingredients: oats, baking soda and baking powder. Using a rubber spatula, fold until well mixed. Fold in chocolate chips and peanuts.
  • Using a medium cookie scoop, scoop and drop cookie dough onto the prepared baking sheet, spaced evenly apart. Optionally, press toppings into the tops of each cookie. Using a fork, flatten each cookie to desired thickness. They won't spread much during baking.
  • Bake for 10-14 minutes. Mine took 12 minutes. Allow to cool on the baking sheet for about 10 minutes. Using a heatproof spatula, carefully lift cookies onto a cooling rack. Allow to cool completely. Enjoy! Storing instructions below.

1/2 cup white sugar
2 mashed bananas

2/3 cup chocolate chips

Steps:

  • Pre-heat the oven to 350 degrees. Grease or spray an 8 x 8 inch baking pan and set aside.
  • In a large mixing bowl combine the first 4 ingredients and cream together well. Add in the vanilla, stir, then add in the peanut butter. Stirring carefully so you don't spill, work in all of the peanut butter until in is completely incorporated.
  • Sprinkle the baking soda over the entire mixture, add in the oatmeal and chocolate chips and blend until well combined.
  • Pour into the 8 x 8 baking pan and bake for 30-35 minutes. Top should be nice and brown and center will still be slightly wiggly/moist. Allow to cool completely before cutting into them.
