2 slices white bread
2 tablespoons butter
1 small ripe banana
2 tablespoons creamy peanut butter

Steps:

  • Place 2 pieces of white bread in the toaster on a light setting. Heat skillet over medium heat with 2 tablespoons butter. While the bread is toasting, in a small bowl, using a fork mash the ripe banana until it reaches a smooth consistency. Using a knife, take both pieces of the toasted bread and spread 2 tablespoons of creamy peanut butter, topping 1 side with the mashed banana. Place 1 slice of bread on top of the other forming a sandwich. Place sandwich in hot skillet browning each side, flipping with a spatula, about 2 minutes per side. Take out of skillet, slice on a diagonal and serve on a plate.

2 slices white sandwich bread
1 small ripe banana, mashed with a fork (about 1/4 cup)
2 tablespoons butter

Steps:

  • Spread peanut butter evenly on 1 slice of bread, then spread mashed banana on other slice, leaving a 1/4-inch border around edge. Close sandwich, gently pressing bread slices together.
  • Heat butter in an 8- to 10-inch heavy skillet over moderate heat until foam subsides, then fry sandwich, turning over once, until golden brown, about 2 minutes total.

1/2 pound bacon
2 small russet potatoes (about 3 ounces each), peeled, sliced 1/4-inch thick
2 small yellow onions (about 2 ounces each), peeled, thinly sliced crosswise into rings
Salt and pepper to taste
2 large slices country-style white bread
Mustard to taste

Steps:

  • Fry the bacon in a heavy cast-iron skillet to desired doneness and drain on paper towels. Heat the bacon drippings over medium heat, add the potatoes and onions and sprinkle with salt and pepper. Fry until the potatoes are browned and crisp on the outside and tender on the inside and the onions are tender. (Do not turn the potatoes until they are crisp.) Taste for seasoning.
  • Grill or broil the bread until toasted on one side. Smear the untoasted sides generously with mustard and layer the bacon, potatoes and onions on top of one mustard side. Cover with the remaining bread, mustard side down.

2 slices white bread
2 tablespoons purple yams (Ube)

Please don't be hard on me when rating this! I would never make it myself and put this on here more out of interest to Elvis fans. THE STORY: On the night of February 1, 1976, Elvis was at his home Graceland entertaining Capt. Jerry Kennedy of the Denver Colorado police force, and Ron Pietrafeso of Colorado's Strike Force Against Crime. The three men began discussing the Fool's Gold Loaf sandwich and Elvis decided he wanted one right then. The men flew two hours to Denver, arriving at 1:40 AM. The plane taxied to a special hangar where the passengers were greeted by the owner of the Colorado Mine Company, Buck Scott, and his wife Cindy who had brought 22 fresh Fool's Gold Loaves for the men. They spent three hours in the hangar eating the sandwiches. When they were done, they flew back to Memphis without ever leaving an airport. (taken from Gloria Pitzer's website). Enjoy!

Steps:

  • The recipe states this makes one sandwich but if you use a large banana and the 3 tablespoons of peanut butter, it makes 2 or 3 sandwiches for me. I don't like it really thick. You have to mash the banana with the peanut butter. We like the extra crunchy peanut butter.
  • I used to just slice the banana when I made a peanut butter and banana sandwich but it is much better mashed. Spread the mixture on two slices of bread. Elvis probably used white bread but I love it on honey wheat bread. Add the butter to a grill or skillet and brown sandwich on both sides. I read that Elvis liked bacon on his sandwich at times and, believe me, it is wonderful with bacon, too
