I wanted a different side dish one night, so I dressed up my usual scalloped potatoes with bacon, green onion and extra cheese. Microwaving speeds things up, but you can save even more time by preparing it a day early.

8 large baking potatoes
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
1 to 2 teaspoons garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3-1/2 cups whole milk
12 ounces process cheese (Velveeta), cubed
1/3 cup crumbled cooked bacon
1 cup shredded cheddar cheese
1/4 cup sliced green onions

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave on high for 15-20 minutes or until tender. Cool slightly., In a saucepan, melt butter. Stir in the flour, garlic powder, salt and pepper until smooth; gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the process cheese and bacon; stir until cheese is melted. Remove from the heat; set aside., Cut potatoes into 1/4-in. slices. Place a third of the slices in a greased 13x9-in. baking dish; top with a third of the cheese sauce. Repeat layers twice. Sprinkle with cheddar cheese and onions. , Bake, uncovered, at 350° for 15 minutes or until cheese is melted.

4 baking potatoes
2 tablespoons butter, melted
salt
1 tablespoon fresh parsley, chopped (or thyme)
1/4 cup cheddar cheese, grated
2 tablespoons parmesan cheese, grated

Steps:

  • Scrub potatoes.
  • Cut, crosswise, into thin slices, using the handle of a wooden spoon to prevent knife from cutting all the way through.
  • Put potatoes in a baking dish; fan slightly. Drizzle with butter.
  • Sprinkle with salt and herbs.
  • Bake potatoes in 425°F (220°C) oven for 50 minutes.
  • Remove from oven.
  • Sprinkle with cheeses.
  • Bake 10-15 minutes longer or until lightly browned and cheeses are melted.

This single dish manages to combine so many of my favorite ingredients! We love to indulge and serve this alongside steaks that are fresh off the grill. (Granted, I could snack on this most ANY time of the day!)

2 lb unpeeled red potatoes
1 c sliced green onions
1/3 c butter
2 c sour cream
6 slice crisp-fried bacon, crumbled
2 c shredded sharp cheese
salt and pepper to taste

Steps:

  • 1. Cook the potatoes in enough water to cover in a saucepan just until tender; drain.
  • 2. Let stand until cool.
  • 3. Slice the potatoes.
  • 4. Saute the green onions in the butter in a skillet just until tender-crisp.
  • 5. Layer the potatoes, sour cream, green onions, bacon, cheddar cheese, salt and pepper 1/2 at a time in a 3-quart baking dish sprayed with nonstick cooking spray.
  • 6. Bake at 350 for 20 minutes.

Crème fraîche and trout caviar add an elegant touch to Irish-style salt-baked potatoes.

4 small Russet potatoes, unpeeled and washed
Sea salt and freshly ground black pepper
2 tablespoons chopped flat-leaf parsley
3/4 cup crème fraîche, divided
1 tablespoon canola oil
1½ ounces trout caviar

Steps:

  • 1. Preheat the oven to 400°F.
  • 2. Place the potatoes on a baking sheet and bake for 40 minutes.
  • 3. Remove the baked potatoes from the oven and set aside until cool enough to handle, then cut them in half lengthwise and scoop out the potato flesh into a bowl, leaving the skins intact. Season the potato flesh with salt and pepper, mash with a fork, and then mix in the parsley and 1/2 cup of the crème fraîche.
  • 4. Spoon the potato mixture back into the potato skins, place on the baking sheet, and brush the skins with the canola oil so that they crisp.
  • 5. Bake for 15 minutes until the filling is heated through and the skins are crispy. Remove the filled potato skins from the oven and spoon the remaining crème fraîche on top, followed by a spoonful of the trout caviar and serve.

4 large russet baking potatoes
4 Tbsp butter
*seasoned salt and pepper to taste
1/4 c each: (grated) fontina, havarti and cheddar
2 Tbsp grated parmesan
1 Tbsp fresh chopped parsley
1 Tbsp fresh chopped thyme
*sour cream, optional
*more fresh chopped herbs, optional

Steps:

  • 1. Rinse and scrub potatoes, pat dry. Cut crosswise into thin slices cutting almost all the way through. (*Use 2 bamboo skewers on either side to prevent cutting all the way down.) Place into baking dish and fan out slightly. Drizzle each evenly with the melted butter. Sprinkle with seasoned salt and pepper to taste. Sprinkle with fresh herbs.
  • 2. Bake in preheated 425 oven for 1 hour or til tender. Sprinkle with cheeses (tossed to mix) into and between slices. Bake 10 minutes longer or til cheese has melted. Serve with sour cream if desired. Sprinkle with more fresh herbs if desired, too.

There are tons of twice baked potato recipes here at Zaar, most with cheddar, bacon, sour cream, etc. This recipe is my take on a TBP I had at a very expensive hotel restaurant in Louisville. They're very simple, but delicious, freeze well, and the recipe is very easily doubled. Baking time is reflected in the cook time.

4 big baking potatoes
oil, to rub the potatoes
coarse salt
1/2-3/4 cup milk
2 -4 tablespoons butter
salt and pepper
1 -1 1/2 cup swiss cheese
3/4 tablespoon fresh tarragon or 3/4 teaspoon dried tarragon

Steps:

  • NOTE: Depending on the size of your potatoes is how much of the other ingredients you will need. If the potatoes tend to be more medium-sized than large, start with the smaller amounts.
  • Heat the oven to 350 degrees. Pierce potatoes, rub the potatoes with oil, sprinkle with the coarse salt, and bake 1 hour or until tender when tested. Set the oven to broil.
  • In a small pan, heat the butter and milk, but do not boil.
  • Cut the potatoes in half lengthwise and scoop out the pulp. Mash, until creamy, with the butter/milk, and salt and pepper to taste. Stir in the cheese and tarragon.
  • Place the potatoes into a pastry bag fitted with a large star tip and pipe back into the shells.
  • Broil the potatoes until the top is just golden brown, about 1-2 minutes, depending on your broiler.

1 1/2 c cut fresh green beans, 2-inch pieces
1 medium sweet red pepper, julienned

8 ounces sharp cheddar cheese
1 teaspoon salt
1 pint whipping cream (2 cups)
1/4 cup soft breadcrumbs
1 tablespoon butter, softened

Steps:

  • Boil potatoes in jackets, cool in refrigerator.
  • Peel and shred using medium grater.
  • Shred cheese with same grater.
  • Butter 2 quart casserole.
  • Alternate layers of potatoes and cheese in casserole; sprinkle with salt.
  • Pour cream over potato cheese layers.
  • Combine crumbs and butter; sprinkle over top.

1/4 cup sliced green onion
4 slices cooked & crumbled bacon
1 8-oz. jar Cheez Whiz Pasteurized

Steps:

  • Microwave potatoes as indicated in Note. (Kay bakes them in an oven) Cut potatoes in half lengthwise; scoop out pulp, leaving 1/4" shell, reserve pulp. Mix reserved pulp, onions, bacon, and 1/4 cup Cheez Whiz. Spoon mixture into shells; place in baking dish. Microwave on High 3 to 5 minutes or until thoroughly heated. Microwave remaining Cheez Whiz according to label directions; pour over potatoes just before serving. Prep time: 15 mins. Cooking time: 25 mins. Note: To microwave-bake potatoes: Pierce potatoes with a fork; place on rack or paper towel. Microwave on High 4 mins. per potato or until tender, turning once. Let stand 5 mins.
