2 tablespoons butter
2 tablespoons all-purpose flour
½ teaspoon curry powder
⅛ teaspoon ground black pepper
1 cup hot milk
6 hard-boiled eggs, peeled and cut into eighths
4 slices toast

Steps:

  • Melt butter in a skillet over medium-high heat; add flour, curry powder, and pepper. Cook and stir butter-flour mixture until smooth, 1 to 2 minutes. Gradually pour milk into butter-flour mixture while continuously stirring until curry sauce is smooth and thickened, about 5 minutes. Mix eggs into sauce and cook until eggs are heated, 2 to 3 minutes.
  • Serve curried eggs over toast.

1 tablespoon butter
¼ cup chopped mushrooms
1 tablespoon chopped onion
1 tablespoon chopped green bell pepper
1 cup crushed tomatoes
1 tablespoon capers
6 eggs, beaten
4 slices bread, toasted

Steps:

  • Melt butter in a skillet over medium-high heat. Cook and stir mushrooms, onion, and pepper in melted butter until soft, about 5 minutes; add tomatoes and capers and bring to a simmer.
  • Pour beaten eggs over vegetable mixture; cook and stir until eggs are scrambled and no longer runny, about 5 minutes. Spoon egg mixture over toast.

My mom started making this when I was little with all the left over eggs from Easter. It's awesome and the recipe can be changed a lot. You can use leftover ham or chicken too. It basically a throw in kind of recipe.

2 (10.75 ounce) cans condensed cream of mushroom soup, undiluted
6 hard-cooked eggs, sliced
1 (16 ounce) package frozen mixed vegetables, thawed
2 cups milk
salt and pepper to taste
8 slices white bread, toasted

Steps:

  • In a large saucepan, stir together the cream of mushroom soup, sliced eggs, mixed vegetables, milk, salt and pepper. Bring to a simmer over medium heat, and cook until vegetables are heated through. To serve, place toast onto plates, and spoon the sauce over it.

One of my Grams favorite ways of serving poached eggs. I love this easy, delicious recipe and serve on special occasions, such as Christmas. I hope you try it sometime, it sure beats just plain old poached eggs. Enjoy!

1/2 pound(s) mushrooms, large chopped
4 tablespoon(s) butter
2 tablespoon(s) flour
1 teaspoon(s) salt
1/4 teaspoon(s) each - black pepper & paprika
1 teaspoon(s) worcestershire sauce
2 cup(s) milk
6 - poached eggs
6 slice(s) hot, toast

Steps:

  • Saute mushrooms in 2 tablespoons of butter, until tender.
  • Sprinkle with flour and seasonings, stirring constantly for 1 minute. Add milk & Worcestershire sauce and cook, stirring constantly. Boil for a couple minutes or until thickened.
  • Poach eggs.
  • Place egg on slice of hot toast.
  • Cover over with sauce. Enjoy, it's delicious!

My mama used to make this for us for breakfast and dinner and I still love it today. You can adjust the recipe to your taste by adding more bacon or less onion, it is up to you.

1/2 lb approx. 8 strips bacon
3 hard-boiled eggs, chopped
1/4 cup chopped onion
2 tablespoons flour
3 cups milk (approx.)
salt and pepper

Steps:

  • Put the eggs in cold water with salt in a pan and boil approximately 15 minutes. Drain and put ice water in the pan so the eggs will be easier to peel.
  • Peel the eggs and set aside.
  • Fry the bacon until crispy and remove from the pan. Drain on paper towels.
  • Add the chopped onion to the bacon grease and saute until transparent.
  • Crumble the bacon and chop the eggs and add to the skillet with the onion.
  • Add flour and stir until flour has browned a little bit.
  • Add the milk and cook on medium until it thickens like gravy. You may need to add some water if it gets too thick. If it is too thin, make a thickening with 1 T. flour and a little bit of water and pour in to gravy and let thicken. Add the salt and pepper to taste.
  • You can either put this over toast or biscuits but we always just used toast.
  • Enjoy!

My Mom used to make this when I was a littler girl. I forgot how wonderful this is. After this is made it can pass for a 5 star recipe.

4 tablespoon(s) butter, cold
4 tablespoon(s) all purpose flour
2 cup(s) milk
4 - hard boiled eggs
6 slice(s) bread, toasted
- salt and pepper to taste

Steps:

  • Make a roux by placing the butter in a pan and melting, then add the flour. Stir for 2 minutes. Add the milk. While the the roux is thickening, cut the hard boiled eggs in half. Take out the yolk. Put in a small bowl cut up the with a fork until crumbling. Take the white and cut into bite size pieces. put into roux. Stir until sauce is thickened. Pour over dry or buttered toast.
  • Place the crumbled egg yolks over the creamed eggs.
