Egg and chips get a morning makeover with this perfect campers' brunch or breakfast recipe

Number Of Ingredients 6

400g new potatoes , see tip below
4 tbsp olive oil
1 onion thinly sliced
2-4 eggs
few large pinches of paprika
handful chopped parsley

Steps:

  • Cut the potatoes into medium-sized chips, then dry in a clean tea towel. Heat the oil in a large frying pan, add the potatoes and onion, and cook fairly gently for 20-25 mins, stirring occasionally, until the potatoes are cooked and golden. Season well.
  • Make 2-4 spaces in the pan and crack in the eggs. Cook until the whites are set, then break the yolks. Sprinkle with paprika and parsley, and serve from the pan.

1 tbsp olive oil
2-3 cooked potatoes , sliced
handful cherry tomatoes , sliced
2 spring onions , sliced
1 egg
few basil leaves

Steps:

  • Heat the oil in a frying pan, then add the potato slices and fry on both sides until brown. Add the tomatoes and spring onions and fry for about 1 min until softened. Season with salt and pepper, then make a space in the pan. Gently break the egg into the space and fry until cooked to your liking. Scatter over the basil leaves and serve.

We eat eggs for breakfast but in reality they can be eaten at any meal. We, sometimes, make a simple meal out of eggs, beans & rice with warm tortillas on the side. This is probably considered spanish style since I learned this from my mother in law who is from El Salvador. You might think of eggs with green beans or cauliflower...

Number Of Ingredients 7

3 c vegetable of choice: potatoes, green beans or cauliflower, cut into bite sized chunks & cooked al dents
1 c chopped ham or other meat (opt)
1/2 c small onion, chopped
1/2 c tomato, chopped
1/2 c green pepper, chopped (opt)
12 large eggs
salt & pepper to taste

Steps:

  • 1. Saute the green pepper, tomato, and onion in some butter until soft.
  • 2. Add al dente cooked vegetables & optional meat. Cook over medium heat for a few minutes, adding more butter if needed.
  • 3. Add eggs and the salt & pepper to taste.
  • 4. Cook over medium, stirring until eggs are set.
  • 5. Serve with beans, tortillas, salsa, sour cream & anything else you might like to make this a simple meal.
