3 tablespoons olive oil, divided
2-1/2 cups cubed eggplant (1/2 inch)
1 small onion, halved and thinly sliced
1/2 teaspoon salt
1/8 teaspoon pepper
1 garlic clove, minced
2 naan flatbreads
1/2 cup part-skim ricotta cheese
1 teaspoon dried oregano
1/2 cup roasted garlic tomato sauce
1/2 cup loosely packed basil leaves
1 cup shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese
Sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. In a large skillet, heat 1 tablespoon oil over medium-high heat; saute eggplant and onion with salt and pepper until eggplant begins to soften, 4-5 minutes. Stir in garlic; remove from heat., Place naan on a baking sheet. Spread with ricotta cheese; sprinkle with oregano. Spread with tomato sauce. Top with eggplant mixture and whole basil leaves. Sprinkle with mozzarella and Parmesan cheeses; drizzle with remaining oil., Bake until crust is golden brown and cheese is melted, 12-15 minutes. If desired, top with sliced basil.

1 medium eggplant, sliced into 1/2-inch-thick rounds and quartered
1/4 c. plus 2 tablespoons extra virgin olive oil
1 tsp. cumin seed, crushed
1/4 tsp. salt
4 pieces flat bread
1 c. crumbled feta cheese
1/2 c. kalamata olives, sliced
1 tsp. fresh-ground pepper

Steps:

  • Heat a grill to medium-high heat. Heat oven to 400°F. Combine eggplant, 1/4 cup oil, cumin, and salt in a large bowl, toss to combine, and set aside.
  • Grill the eggplant until just cooked through, about 8 minutes. Remove from the grill and set aside. Brush both sides of flat breads with remaining oil. Grill the flat bread for 5 minutes.
  • Turn the flat bread over, top with eggplant, cheese, olives, and pepper and grill for 5 more minutes. Transfer pizzas to a baking pan, bake for 8 minutes, and serve immediately.

1 soft lavash bread
Olive oil
2 small Japanese eggplants, halved
Salt and freshly ground black pepper
Spicy Hummus, recipe follows
12 ounces crumbled feta cheese
Red Chile Oil, recipe follows
Chopped fresh mint, for garnish
1 1/2 cups dried chickpeas, cooked until soft
2 cloves garlic, chopped
1/4 cup tahini
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 lemon, juiced
1/2 cup to 3/4 cup olive oil
Salt and freshly ground pepper
3 tablespoons chopped parsley leaves
2 ancho chiles, stemmed and chopped
1 New Mexican red chili, stemmed and chopped
1 teaspoon chile de arbol powder
1 cup canola oil
Salt

Steps:

  • Preheat the grill to high. Brush the lavash with oil on both sides. Grill until golden brown on both sides. Brush the eggplant with oil and season with salt and pepper. Grill the eggplant, cut-side down, until golden brown. Turn the eggplant over and grill until just cooked through. Remove from grill and cut into 1/4-inch thick slices.
  • Spread the hummus over the bread, top with the eggplant, and then the feta. Grill, with the cover down for 2 to 3 minutes, or until cheese is melted. Remove from the grill, drizzle with the red chile oil and sprinkle with mint.
  • Put the chickpeas, garlic, and tahini in the work bowl a food processor. Pulse until it becomes paste-like, adding a few tablespoons of water, if needed. Add the cayenne, cumin, and lemon juice, and pulse again until combined. With the motor running, slowly add the olive oil until emulsified. Add the parsley and pulse until just combined. Season with salt and pepper, to taste. Transfer to a small bowl.
  • Place all ingredients in a blender and blend for 5 minutes. Strain into a small bowl.

2 lbs eggplants (long slender type)
olive oil (for frying)
5 tablespoons of chopped fresh basil
5 garlic cloves, minced
1 lb of ripe tomatoes, diced
1/2 lb feta cheese, crumbled
sea salt
fresh ground black pepper

Steps:

  • Wash the eggplants and remove stems. Cut lengthwise into 1/2 inch slices. Fry lightly (until soft and gently browned) in 1/4 inch of oil.
  • Preheat the oven to 355°F (180°C).
  • Layer the eggplant in the bottom of a baking dish.
  • Combine the tomatoes, basil, garlic, and salt and pepper to taste, in a bowl, and spoon the mixture over the eggplant. Top with feta cheese, and bake at 355°F (180°C) for 45 minutes.
  • Serve hot, warm, or at room temperature.

1 pint grape tomatoes, halved
1/2 cup shredded fresh basil
2 garlic cloves, pressed
2 tablespoons balsamic vinegar
3/4 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
1 lb eggplant
1/4 cup olive oil or 1/4 cup canola oil
1 (16 ounce) package baked pizza crusts (Boboli)
6 ounces crumbled feta cheese

Steps:

  • Mix together the first 6 ingredients in a bowl; set aside.
  • Cut the eggplant crosswise into 1/2 inch thick slices.
  • Brush both sides of the eggplant with oil; put slices on a foil-lined baking sheet.
  • Broil for 2 minutes on each side or until lightly browned.
  • Place eggplant evenly over the pizza crust (I sprinkle ever so lightly with salt).
  • Top with tomato mixture.
  • Sprinkle with cheese. Bake at 450° for 8-10 minutes or until heated.
  • Serve immediately.
