Daisy Williams taught me how to make these simple cookies when I was a teenager. They were always a hit on my Monday night cooking while Mama was gone to Bible study.

- 1. Beat egg white until stiff.
- 2. Beat sugar int white. Add extracts and salt.
- 3. Drop by teaspoonfuls on ungreased cookie sheet. Bake in 250 degree oven for 30 minutes.

Steps:
- Heat oven to 200°F.
- Beat egg whites and cream of tartar with mixer on high speed until stiff peaks form. Gradually beat in sugar, then coffee. Continue to beat 1 to 2 min. or until glossy. Blend in vanilla.
- Spoon into pastry bag fitted with large round tip. Use to pipe egg white mixture into 22 mounds, 1 inch apart, on parchment-covered baking sheet.
- Bake 2 to 2-1/2 hours or until cookies are firm. Transfer to wire rack; cool completely.
- Melt chocolate as directed on package; drizzle over cookies.

Steps:
- Preheat oven to 325°F Cream butter and cream cheese in large mixing bowl. Add the sugar and beat until fluffy (about 3 min.) Slowly stir in the flour by hand, then add cranberries and white chocolate. Drop by teaspoonfuls onto ungreased baking sheets.
- Bake for about 15 minute or until light golden brown. Let cool for 5 min on cookie sheets, then finish cooling on wire rack.
- The batter for these cookies is delicious! And since it doesn't have eggs in it, you can nibble. It tastes like frosting. The cookies are fabulous!
