QUICK EGG ROLL DIPPING SAUCE
Beat the flavor of the 'included sauce' (usually not too hard) with this quick and easy dipping sauce that only requires a few Asian ingredients! If you want to make this into a teriyaki, just add a bit of brown sugar (2 tbsp) and then cook it over low heat, adding a tablespoon of cornstarch for a thicker, glossier glaze-type sauce.

BAKED POT STICKERS- SWEET ASIAN DIPPING SAUCE - CHICKEN EGG ROLL
This is one of my all-time favorite recipes from Pampered Chef. They're quick, easy and can be made in bulk and frozen for later. Such an attractive appetizer, too! From a pampered chef invitation I received from a friend.

Steps:
- Preheat oven to 425°F.
- In a large bowl, combine chicken, water chestnuts, green onions, carrot, ginger, soy sauce, egg white, mayo and garlic. Mix well.
- To assemble potstickers, place 12 wonton wrappers onto a smooth, clean and dry surface. Lightly brush the edges of each wonton with water. Place about 1 tablespoon of filling onto the center of each wonton. Fold corners of the wonton to the middle to secure the filling inside (envelope style works well, but you can be creative).
- Place wontons on a cookie sheet and lightly spray with Pam or olive oil. Repeat with remaining wontons.
- Bake 12-15 min until golden brown.
- For dipping sauce, place jelly in a small bowl. Microwave on high 30-40 sec or until warm. Add vinegar and soy sauce. Whisk until well blended.
- Serve potstickers with dipping sauce and enjoy!
VIETNAMESE EGG ROLL DIPPING SAUCE CHEAP EASY
My family has been making this for years since they immigrated from Vietnam. It's really good and LIGHT, as opposed to the strong flavor of uncut fish sauce. It can also be used as dressings for cabbage salads and any other dishes that needs a light wake-me-up of flavor. You can substitute 'cups' or 'parts'. If you make big batches, you can refrigerate the in a sealed bottle and take it out whenever you need. It stores really well in the refrigerator. I found this sauce is best with egg rolls that are made with pork, but it can be used with any other egg rolls. Please, Enjoy!

- Saute sauerkraut and caraway in a skillet over medium-high heat. When most of the moisture has evaporated and sauerkraut begins to brown, stir in lemon juice and set aside.
- Arrange an egg roll wrapper on a work surface with a corner towards you; brush edges with egg wash.
- Place a strip of cheese on the wrapper, about 1 inch above the bottom corner, then top with strips of beef and about 3 tbsp sauerkraut mixture. Drizzle with mustard. Fold the bottom corner up over the filling to enclose, fold in the sides, then roll to the top corner of the wrapper. Repeat with remaining wrappers and filling.
- Heat oil in a large skillet over medium-high heat to about 360*. Add half the egg rolls and fry on all sides until brown and crisp, 5-7 minutes.Drain on paper towels while frying remaining rolls.
- Serve Egg Rolls with Thousand Island Dressing for dipping.

- Combine cashews, cilantro, garlic, green onions, sugar, black pepper and cumin in a food processor or blender.
- Blend with short bursts until the mixture is well blended. The cashews and garlic must be well chopped.
- They should be about half the size of a grain of rice.
- Combine the vinegars, honey, tamarind and saffron in a small bowl. Heat mixture for about 1 minute in microwave and stir until tamarind pulp dissolves completely.
- Pour tamarind mixture into blender or food processor with the cashew mixture and mix with short bursts until well combined (about 20 seconds).
- Pour blended sauce into small bowl and add oil. Stir by hand. Cover and refrigerate at least 30 minutes before serving.
