EGG AND HASH BROWN PIE
Not only is this casserole easy to make and great tasting, it's pleasing to the eyes with it's shades of golden brown, yellow, and green. This dish is great served with sliced fruit and toast or muffins. You may substitute chopped cooked ham for the bacon if you wish.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a large bowl, beat together the eggs and milk. Stir in the bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.
- Bake in the preheated oven 25 to 35 minutes, or until a knife inserted in the center comes out clean. Sprinkle the remaining Cheddar cheese on top, and continue baking for 3 to 4 minutes, or until the cheese is melted. Remove from oven, and let sit 5 minutes before serving.

- Heat a 12" skillet on medium heat and cook bacon until crisp. Remove bacon and set aside, reserving drippings. Add potatoes to skillet and cook on medium high heat until crispy and browned. Turn out potatoes into a 9" pie plate and press to form a crust on bottom and sides of plate. Cover and chill 30 minutes. Meanwhile preheat oven to 350 degrees. In a medium mixing bowl, whisk together eggs and milk. Add bacon and cheese and combine well. Pour egg mixture into potato crust and bake 40 minutes or until knife tests clean.

- Spray a 9" pie plate with cooking spray. Heat oil in a 12" nonstick skillet on medium high heat. Add potatoes the skillet with ½ tsp salt. Cook 6 to 8 minutes or until light brown. Turn out potatoes into the prepared pie plate and press to form crust on bottom and sides of plate. Cover and chill 30 minutes. Meanwhile, preheat oven to 350 degrees. In a medium mixing bowl, whisk together eggs, milk and mustard. Add bacon, cheese, roasted peppers, thyme and green onions. Pour into the potato crust and bake 40 minutes or until knife tests clean.

- In a medium bowl, beat together eggs and milk. Stir in hash browns, bacon and 1 cup shredded cheddar cheese. Pour into prepared casserole dish.
- Bake in preheated oven for 25 to 35 minutes, or until egg is set in the middle. Sprinkle the reserved cup of shredded cheese on top and continue baking for 3 to 4 minutes or until cheese is melted. Remove from oven and let sit for 5 minutes, the slice and serve.

Steps:
- 1. Cook ham & set aside. Preheat oven to 350. 2. Lightly grease a 9x11 casserole dish. In a medium bowl beat eggs & milk. Stir in hash browns, onions, ham & 1 cup cheese. Pour into the casserole. 3. Bake at 350 for 25-35 minutes or until middle is set. Sprinkle with cheese. Bake 3-4 minutes more. Remove & let stand 5 minutes.
