I love fried rice - the perfect balance between comfort and healthy. . I like cooking the egg separately so you have fluffy pieces of egg within the dish. You can use protein such as shrimp or diced roast pork but I love the combination of asparagus rounds and shimeji mushrooms - this flavourful light dish will make the perfect accompaniment to many of your favourite Chinese dishes.

Number Of Ingredients 15

Scrambled Eggs:
3 large free-range or organic eggs, lightly beaten
1 pinch sea salt
1 pinch ground white pepper
1 tablespoon peanut or vegetable oil
Fried Rice:
2 tablespoons peanut or vegetable oil
2 cloves garlic, finely chopped
4 1/3 ounces baby asparagus spears, tips sliced 3/4 inch, stems sliced into 1/3-inch slices
1 ear fresh sweet corn, kernels removed, core discarded
2 3/4 ounces shimeji mushrooms, individual stems separated
1 3/4 pounds cooked jasmine rice, cold
3 tablespoons low-sodium light soy sauce
2 tablespoons toasted sesame oil
1/4 teaspoon ground white pepper

Steps:

  • 1 red chile, deseeded and finely chopped
  • For the eggs: Lightly beat the eggs in a bowl and sprinkle with the salt and pepper.
  • Heat a wok over medium heat and add the peanut oil. Pour in the beaten eggs and stir to lightly scramble until the eggs have turned golden and are still fluffy. Take off the heat and set aside.
  • For the fried rice: Reheat the wok over high heat until smoke starts to rise, and then add the peanut oil. Add the garlic and stir quickly for a few seconds, then stir in the asparagus and corn and cook until the asparagus starts to turn a deeper green and the corn starts to turn golden yellow, 2 minutes. Add the mushrooms and toss together. Stir in the rice and toss to combine for 1 to 2 minutes. Season with the soy sauce, stir and mix well.
  • Return the eggs to the wok, season with the sesame oil and pepper and give it a few more stirs. Transfer to a large serving plate and garnish with chiles. Serve immediately.

1 tablespoon vegetable oil
2 eggs, beaten
3 ounces unsmoked bacon, chopped into small pieces
2 ounces frozen peas
4 ounces shiitake mushrooms, diced
9 ounces cold cooked rice
1 dash light soy sauce
1 dash sesame oil

Steps:

  • Heat a wok over a high heat and add the vegetable oil.
  • Tip the beaten eggs into the wok, stir to scramble, then remove and set aside.
  • Put the bacon into the same wok and stir fry until browned and slightly crisp.
  • Throw in the frozen peas and mushrooms and stir fry for less than a minute. Add the rice and mix well until the rice has broken down.
  • Return the eggs to the wok. Season with light soy sauce, sesame oil and a pinch of white pepper. Serve immediately.

1/4 cup oyster sauce
1 tablespoon soy sauce
3 1/2 tablespoons peanut oil or 3 1/2 tablespoons vegetable oil
2 large eggs, beaten lightly
8 ounces small shrimp, peeled and deveined
1 cup frozen peas, preferably baby peas, thawed
1/2 ounce dried shiitake mushroom, rehydrated in 1 cup hot water until softened, about 15 minutes, then drained, trimmed of stems, and (5 to 6 medium)
4 ounces ground pork (optional) or 8 ounces sliced smoked ham, cut into 1/2 inch pieces (optional)
4 ounces roast pork, cut into 1/2 inch chunks
2 garlic cloves, minced (about 2 teaspoons)
5 cups cold cooked white rice
5 medium scallions, sliced thin

Steps:

  • Combine oyster sauce and soy sauce in small bowl; set aside.
  • Heat 12-inch nonstick skillet over medium heat until hot.
  • Add 1 1/2 teaspoons oil.
  • Add eggs and cook without stirring, until they just begin to set, about 20 seconds, then scramble and break into small pieces; continue to cook, stirring constantly, until eggs are cooked through.
  • Transfer eggs to small bowl and set aside.
  • Return skillet to medium heat and heat until hot; about 1 minute; add 1 1/2 teaspoons oil.

2 garlic cloves, finely chopped
2 (3 1/2 ounce) packages shiitake mushrooms
1 lb chicken breast tenders
1/4 cup all-purpose flour, divided
1 cup unsalted chicken stock (or broth)
1/4 cup honey
1/4 cup reduced sodium soy sauce
1 teaspoon ginger, spice paste
1/2 teaspoon red pepper flakes
1 tablespoon sesame oil
1/2 cup presliced green onion
1 (10 ounce) package frozen brown rice
1 lime, juice of
1/4 cup presliced green onion
1 tablespoon sesame oil
1 teaspoon toasted sesame seeds (optional)

Steps:

  • Asparagus Shiitake Chicken:.
  • Cut asparagus into 1/2-inch pieces, removing tough root end.
  • Chop garlic.
  • Remove and discard mushroom stems; cut mushrooms into quarters.
  • Cut chicken into small bite-size pieces; place in medium bowl (wash hands).
  • Sprinkle 2 tablespoons flour over chicken and toss until evenly coated. Whisk in second bowl: remaining 2 tablespoons flour, stock, honey, soy sauce, ginger paste, pepper flakes, and garlic until blended; set aside.
  • Preheat large, nonstick sauté pan on medium-high 2-3 minutes. Place oil in pan, then add chicken; cook and stir 3-4 minutes or until browned. Remove chicken from pan.
  • Place asparagus, mushrooms, and green onions in same pan; cook and stir 3-4 minutes or until mushrooms are tender.
  • Reduce heat on pan to low. Stir in chicken and soy sauce mixture; simmer 2-3 minutes or until chicken is 165°F and sauce begins to thicken. Serve.
  • Sesame Rice:.
  • Microwave rice following package instructions. Squeeze lime for juice (1 tablespoon).
  • Stir remaining ingredients into rice. Serve.

We often have fried rice in various guises, either as accompaniment or as a one-dish light meal. In this version, fresh asparagus gives nuttiness and crisp texture that cannot be achieved with the canned product. TIP: 1. It is essential for the cooked rice to be loose-grained. Either pre-wash the rice in cold water to remove the free starch or allow cooked rice to cool to room temperature and then fluff with two-pronged fork. Attempting the latter with unwashed warm rice will result in a sticky mush. Cooking time does not include cooking the rice as this step can be done in advance. 2. A non-stick or seasoned carbon steel wok is most suitable for stir-frying rice. VARIATIONS: 1. Replace the asparagus with chopped mushrooms, fresh peppers, bacon, ham, canned tuna or any other ingredient, or any combination. Also add scrambled raw egg to the rice while constantly stirring in final stages of frying for added flavour. 2. Replace red onion with white, green or spring, or shallots as and when available. 3. Spiciness is varied by adding more or less crushed chillies and using fresh green or red chillies add to colour. 4. Rice can be cooked in any stock of your choice, or add two teaspoonsful of any soup powder mix to the water in which the rice is cooked to achieve subtle variations in taste.

1 teaspoon plus 2 tablespoons sesame oil, divided
3 eggs, beaten
2 tablespoons canola oil
2 small onions, finely chopped
6 medium fresh mushrooms, thinly sliced
2 teaspoons minced garlic
1 teaspoon minced fresh gingerroot
4 cups cold cooked rice
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 green onions, thinly sliced
Optional ingredients: Chinese-style mustard, duck sauce and additional soy sauce

Steps:

  • In a large skillet, heat 1 teaspoon sesame oil over medium-high heat. Add eggs to skillet. Cook and stir until set. Remove to a plate; set aside., In the same skillet, heat canola oil and remaining sesame oil. Saute onions and mushrooms for 2-3 minutes or until mushrooms are tender. Add garlic and ginger; saute 1-2 minutes longer., Stir in the rice, peas, soy sauce, salt and pepper. Chop egg into small pieces; stir into skillet and heat through. Stir in green onions. Serve with mustard, duck sauce and additional soy sauce if desired.
