A great recipe for an electric breadmaker - or do it the traditional way

500g strong white flour, plus extra for dusting
2 tsp salt
7g sachet fast-action yeast
3 tbsp olive oil
300ml water

Steps:

  • Mix 500g strong white flour, 2 tsp salt and a 7g sachet of fast-action yeast in a large bowl.
  • Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
  • Tip onto a lightly floured work surface and knead for around 10 mins.
  • Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
  • Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
  • Place it on the baking parchment to prove for a further hour until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7.
  • Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
  • Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.

EASY WHITE BREAD FOR LARGE 13" PULLMAN PAN



Easy White Bread for Large 13

This recipes fits a 13-14" Pullman Pan. Easier ingredient list than the King Arthur Flour recipe. I mix it in my ABM, then shape and set in the pan for the second rise. You can hand knead or use your mixer. I get 20 slices out of this recipe. A favorite for sandwiches and toast. You don't have to use the Pullman pan, and if you don't, use two 8" loaf pans and get two nice puffy loaves.

1 1/3-1 1/2 cups water, lukewarm
1 -2 tablespoon honey
2 tablespoons butter, softened
4 cups all-purpose flour
1 3/4 teaspoons salt
1/2 cup non-fat powdered milk
2 1/4 teaspoons yeast

Steps:

  • Select Dough setting on your bread machine.
  • Put ingredients in the machine in the order suggested by your machine manufacturer. Let rise. about 90 minutes, until double in size.
  • Meanwhile, generously butter your Pullman Pan and lid.
  • Remove dough from machine. Handle dough with greased hands. Form into a log approximately 12-13 inches long. Place in pan, pressing the ends into corners and pan edges.
  • Place lid on, leaving open about an inch so you can peek.
  • Let rise until about 2/3 full, or about an inch and a half from the pan top. About 60 minutes. Near the end of the rising time, preheat your oven to 350.
  • Close lid fully. Bake for 25 minutes. Remove lid. Bake for another 15-20 minutes until golden brown or desired crust color is achieved.
  • Internal temp of bread should be 190 f when tested with an instant read thermometer.
  • Remove from pan to rack. If desired, brush crust with butter for a softer crust. Let cool before slicing. Store in airtight bag.

  • Firstly before we start, keep in mind that the doughs first rising can be done over night in the fridge in a well oiled bowl.
  • Combine the flour, yeast, salt and caster sugar in a large bowl. I like to mix the mixture with a regular knife.
  • Once combined make a well in the center of the flour in preparation for the wet ingredients.
  • Measure 300ml of luke warm water and add 3 tbsp of olive oil.
  • Pour the water and oil into the well of flour and gradually mix the flour in until it forms a dough.
  • Transfer the dough to the work top and start to knead. Do not be intimidated if your dough is quite wet. Many people tend to then add to much flour and this will result in a denser bread. Persist in kneading for ten minutes until smooth and elastic.
  • Place your smooth dough into a lightly oiled, covered bowl and leave to prove for an hour. If you have made your dough in the evening then you can leave in the fridge overnight.
  • Once your hour prove has finished knock back the dough for a good 10 minutes, then roll into a long sausage shape and divide into 8 sections. Form these sections into small rounds and place on covered baking trays for another hour.
  • Whilst proving preheat the oven to 220C/fan. (This step also applies for the fridge proving option).
  • Now cook your rolls in the oven for 10-15 minutes. Once out of the oven transfer to a cooling rack, tapping the bottom of the rolls to check that they sound hollow. Cover with a clean tea towel when cooling. This will absorb the moisture from the heat coming of the rolls.
  • Best eaten warm!

1 1/4 cups warm water
1 package active dry yeast
2 tablespoons soft shortening
2 teaspoons salt
2 tablespoons sugar
3 cups flour

Steps:

  • Using a large mixer bowl, dissolve yeast in warm water.
  • Add shortening, salt, sugar and half the flour.
  • Beat 2 minutes at medium speed.
  • Add remaining flour and blend until smooth.
  • Scrape batter off sides of bowl and cover with a cloth.
  • Rise in warm place for 30 minutes, then beat 25 strokes by hand and spread evenly in a greased loaf pan.
  • Smooth top with floured hand and let rise again until 1/4" from top of pan (about 40 minutes).
  • Bake in preheated 375° oven for 45 to 50 minutes or until brown.

  • 4. When dough process is complete remove dough from pan to lightly floured board. Shape dough into loaf and place in sprayed loaf pan...cover with dish cloth and let rise abiut 30 to 45 minutes
  • 5. Baked in preheated 350 degree oven about 30 to 45 minutes or until loaf is nicely browned and sounds hollow when tapped on top..let cool 10 minutes then remove from pan and cool completely.

2 tablespoons shortening
2 teaspoons salt
2 tablespoons sugar
1 cup hot milk
1 cup hot water
1 package dry yeast
1/4 cup warm water
6 cups all-purpose flour (approx.)

Steps:

  • Mix shortening, salt, and sugar in a large bowl for about 2 minutes.
  • Do not worry if the shortening does not completely melt, but make a good attempt.
  • Add the hot milk and water.
  • Let cool to lukewarm.
  • In a small bowl, mix yeast with 1/4 cup water.
  • Let stand 5 minutes.
  • Add 3 cups flour and yeast all at once and mix until well blended.
  • Add 2 more cups of flour, one cup at a time, mixing until blended well.
  • Pour dough onto lightly floured board.
  • (It will not actually"pour," so scrape out remnants with a spatula or potlicker.) Knead for two minutes with floured hands.
  • Let rest for ten minutes.
  • Dough will be very sticky.
  • Adding enough of the remaining flour to keep the dough from sticking, knead the dough until smooth, elastic, and pliable (about 8-10 minutes.) Place the dough in a large, greased bowl, turning once to grease.
  • Cover and allow to rise in a warm spot for about an hour or until doubled in bulk.
  • Punch dough down and let rise to previous size and perhaps a little bigger (about 30-45 minutes.) Split dough into two halves.
  • Place each half in a loaf pan and cover.
  • Allow to rise until doubled in bulk (anywhere from 30 minutes to 1 1/2 hours) Bake in 425 degree oven for 15 minutes.
  • Remove from oven and cover in a cloth.
  • Change oven heat to 375 and bake for 15 minutes.
  • Remove pan from oven and immediately remove from pan.
  • Knock lightly on the bottom of the loaf.
  • If a hollow sound is made, bread is done.
  • If not, return to the pan and bake 5-15 minutes.
  • Allow to cool for 30 minutes before slicing.
  • Notes for great crusts: For a hard, crisp crust, brush the top with cold water three or four times while baking.
  • For a soft crust, brush with cold milk or melted butter before baking.
  • For a shiny crust, brush a mixture of egg yolk and one tbsp milk on bread before baking.

2 eggs
1/2 c milk (any kind will work)
1/2 tsp vanilla
6 slices white bread (or day old bread)
1/4 c sugar
oil for deep frying
cinnamon sugar mixture to sprinkle on top
preserves of your choice (if you want a stuffed donut)
powdered sugar to coat donuts

Steps:

  • 1. Heat vegetable oil in a pan, deep enough to cover half the donut. Check if oil is hot enough, flick one drop of water into pan. When it starts singing, it is hot enough to deep fry.
  • 2. Beat eggs, milk, vanilla and sugar in a bowl. Set aside. Cut crusts off of the bread and cut into 4 triangles for each slice.
  • 3. If you want stuffed donuts: Spread a small amount of preserves on one half of bread and top it with another slice.
  • 4. Soak the bread triangles covering both sides and edges well. Fry the egg-soaked bread until golden on both sides.
  • 5. For regular donuts, move to cooling rack and shake cinnamon sugar on both sides. For stuffed donuts, remove to cooling rack and let cool for a little bit. Shake them in a ziplock with powdered sugar to coat.

2 1/2 c unbleached white bread flour
1/2 c unbleached wheat flour
1 - 1 1/2 c warm water (115-120 degrees) , plus 2 tablespoons
1 tsp cocoa powder
1 Tbsp sugar
1 Tbsp molasses
1 tsp sea salt
1 - 1 1/2 Tbsp active dry yeast * i use fleischman's bread machine yeast, or rapid rise yeast.
2 Tbsp melted butter

Steps:

  • 1. Pour white flour into a large bowl, then scoop flour with a big spoon into the measuring cup (so flour will not be compressed) and level out flour by running the flat side of a knife across the top of the measuring cup. Put measured flour into a slightly smaller bowl.
  • 2. Now add the salt, sugar and cocoa to flour and stir to combine. Do NOT add yeast yet.
  • 3. In small pot, melt butter then add the water to the pot and heat to 120 *F.
  • 4. Add molasses to pot and stir to mix it into water. Now pour this into the bread machine reservoir.
  • 5. Spoon flour mix into reservoir then use spoon to make a shallow hole in the middle. Do not go through to liquid. Pour the yeast into this hole. Put into bread machine and run it on the one hour bread cycle.(#5 setting on mine)
  • 6. * You may need to add a tad more water if mix is too dry. Just add a teaspoon at a time and scrap the sides down with rubber spatula.
  • 7. When bread machine is finished, turn loaf out cool on a rack. Do not wrap or bag till it is cooled completely.
  • 8. Sometimes I also add 1/4 tsp. garlic powder and onion powder to the dry ingredients. Very good for sandwiches !

VERY BASIC EASY WHITE BREAD

2 tablespoons honey
4 tablespoons yeast
4 cups hot water
1/2 cup oil
1/2 cup honey
1/2 cup powdered soy protein concentrate
1 teaspoon vitamin C powder
1 tablespoon salt
8 cups whole wheat flour
4 cups white flour

Steps:

  • Stir together 1-1/3 cup hot water, 2 Tbs honey, and yeast. Let work for five minutes.
  • In large bowl mix together 4 cups hot water, oil, 1/2 cup honey.
  • Blend in soy powder, Vitamin C Crystals, salt, 4 cups of the whole wheat flour and 2 cups of the white flour.
  • Then blend in yeast mixture and 4 more cups wheat flour and two more cups white flour. Get a sticky dough consistency.
  • Knead on lightly oiled board for 20 minutes (or 10 minutes in machine with bread hook - dough should just clean sides of machine bowl).
  • Shape 6 loaves and let rise under warm damp towel inside 80 degree oven (I just turn mine on for a minute and then turn it back off). Let rise for 20-25 minutes.
  • Take out of oven and preheat to 365 degrees.
  • Bake for 20-25 minutes.
  • Remove immediately from pans, put on cooling racks and brush tops with olive oil.

You can make terrific bread in six steps!! It is really easy to make. This bread has been a hit with our family for many years. I adapted it from a recipe on a package of Winn Easybake Yeast and Bread Improver. The recipe makes 2 680g (1 1/2 lb loaves). Use your imagination when baking the bread. Use smaller loaf tins to make different sizes of loaves. Make rolls, etc.

2 tablespoons yeast
1 tablespoon bread improver (optional)
1 kg bread flour
1 tablespoon salt
1/2 tablespoon sugar
2 tablespoons butter
600 ml warm water

Steps:

  • Blend dry ingredients, rub in shortening. Add warm water (40°C, 105°F), mix until smooth.
  • Cover with moist cloth, stand in warm place 30 - 40 minutes.
  • Knock down, knead lightly. Cut to size required, cover with moist cloth, stand for 10 minutes.
  • Knead well, mould to the required shape. Place in greased tin or on greased tray.
  • Cover wtih a damp cloth and let the bread rise in a draft-free place until 2 - 3 times its original size. Brush lightly with milk, beated egg or shortening.
  • Bake in oven (230°C, 450°F) until loaf sounds hollow when tapped.
  • NORMAL BAKING TIMES: White bread 25-30 minutes.
  • Usually, at 25 minutes, I take the bread out of the tins and return the bread to the oven for a further 5 minutes This browns the bread nicely, all over.
