Walnut Cream image

This dessert sauce is great with any cooked fruit or with cakes. The recipe is vegan, but you can make variations if you don't follow a vegan diet.

2 cups walnuts (halves and pieces)
1 cup almond ​milk (or hazelnut milk)
¼ cup coconut nectar (or rice syrup)
2 teaspoons vanilla extract
1 pinch salt (sea salt)​

Steps:

  • Place the walnuts in a bowl with enough water to cover them and allow them to soak for at least 8 hours or overnight.
  • Preheat the oven to 325 F.
  • Drain the walnuts well and blot them dry with a paper towel. Place them in a single layer on a baking sheet or cookie tray and bake for 10 minutes. Let the walnuts cool completely.
  • Place the almond milk, nectar or syrup, vanilla and sea salt in a blender. Blend for 10 seconds.
  • Add the nuts to the mix and blend again until smooth. This could take as long as a minute. You may have to stop periodically to scrape down the sides.
  • Chill for 30 to 45 minutes in the refrigerator.

These glazed walnuts have a crunchy coating of pure maple syrup! They're easy to make and healthier than candied nuts: perfect for salads and snacking.

1 cup raw walnuts
¼ cup pure maple syrup
2 pinches kosher salt

Steps:

  • Add the walnuts and maple syrup to a small non-stick skillet over medium heat. When the maple just starts to bubble, reduce the heat to low but still slowly bubbling. Simmer for about 6 to 8 minutes, stirring occasionally.
  • In the last minute when the maple syrup is mostly evaporated, stir continuously until the liquid is totally cooked out and the nuts start clumping together (but watch so that it doesn't burn or go too far and become powdery, not glossy!). Immediately remove from the heat.
  • Transfer the walnuts to a sheet of parchment paper in a single layer. Sprinkle with the salt and allow to cool to room temperature, about 5 minutes if eating right away and about 15 minutes if you want to store them for later use. Store in a covered container at room temperature.

4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups milk
1 cup heavy cream
2 sprigs fresh sage
1/4 cup chopped walnuts
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
Pinch of ground nutmeg

Steps:

  • Heat the butter in a large saucepan over medium heat. When bubbling, add the flour. Cook, stirring constantly with a wire whisk, for 1 minute. While whisking, slowly pour in the milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
  • Remove pan from heat; stir in cream, sage, walnuts, salt, pepper, and nutmeg. Cover; set aside to infuse for 30 minutes.

My dad and I loved black walnut anything. Black walnuts taste very different than English walnuts so I created this one on his behalf. I like it best topped with caramel sauce or honey.

2 cups light cream
1 cup half-and-half cream
½ teaspoon black walnut extract
½ cup chopped black walnuts

Steps:

  • In a medium bowl, stir together the sugar, light cream, half-and-half and black walnut extract. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions. When ice cream is done, fold in walnuts, and transfer to a freezer container. Freeze until solid.

3 cups confectioners' sugar
1 teaspoon pure vanilla extract
100 walnut halves

Steps:

  • Whip one egg white w/ water until frothy.
  • Beat in conf. sugar until firm.
  • Add vanilla and knead.
  • Roll in 1/2 inch diameter balls.
  • Press firmly between walnut halves.
  • Makes about 50 pieces.
  • Store in airtight container.
