CLASSIC WALDORF SALAD



Classic Waldorf Salad image

Crunchy with crisp apples, celery and toasted nuts, this easy Waldorf salad is a classic recipe perfect for a crowd any time of year.

2 cups diced tart apples (, or 2 apples)
1 tablespoon sugar
2 teaspoons lemon juice
1 cup diced celery
1 cup grapes (, halved)
1/2 cup toasted walnuts or pecans (, roughly chopped)
1/2 cup whipping cream (, whipped)
1/4 cup mayonnaise
1/2 teaspoon kosher salt

Steps:

  • Add the diced apples to a large mixing bowl and sprinkle with the sugar and lemon juice. Toss to coat. Add the celery, grapes, and nuts.
  • In another bowl, whip the whipping cream until peaks form, then gently fold in the mayonnaise. Fold into the apple mixture and season with the kosher salt. Taste and adjust the seasoning to your liking. Chill for 1 hour or overnight. Serve by itself or on a lettuce leaf.

2 ½ tablespoons distilled white vinegar
1 apple - peeled, cored, and chopped
1 large stalk celery, diced
½ cup raisins
½ cup chopped walnuts

  • In a mixing bowl, whisk together the mayonnaise and vinegar.
  • Add the apples, celery, raisins and walnuts if desired. Add salt and pepper to taste.
  • Mix together well and serve chilled.

1/3 cup 2-percent Greek yogurt
2 tablespoons mayonnaise
1 teaspoon honey
1/2 teaspoon freshly grated ginger
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
1 cup 1/4-inch chunks of pineapple
2 small cooked boneless skinless chicken breasts, cut into 1/2-inch cubes
1 small Granny Smith apple, cored and cut into 1/2-inch cubes
1/2 cup fresh cilantro leaves, chopped
1/3 cup cashews, roughly chopped
4 leaves Bibb or iceberg lettuce

Steps:

  • Whisk together the yogurt, mayonnaise, honey, ginger, lemon juice and 1/2 teaspoon salt in a large bowl. Add the pineapple, chicken, apples and three-fourths of both the cilantro and the cashews. Toss to combine and serve right away or refrigerate until chilled, about 1 hour.
  • Arrange the lettuce leaves on a platter and top each with a scoop of salad. Sprinkle with the remaining cilantro and cashews and top with a few grinds of pepper.

1 green apple, such as Granny Smith or Crispin, unpeeled, cored, and coarsely chopped
2 stalks celery, cut into thin half-moons
3 ounces (about 1/2 cup) red grapes
3 ounces (about 1/2 cup) green grapes
1 lemon
6 tablespoons plain nonfat yogurt
2 teaspoons Dijon mustard
1 tablespoon honey
1 bunch (about 1 pound) Bibb or Boston lettuce, washed and torn into bite-size pieces
1/4 cup walnuts, toasted and chopped
Chives, for garnish

Steps:

  • Place apples, celery, and grapes in a medium bowl, and toss with juice of half the lemon. In another bowl, whisk together yogurt, mustard, honey, and juice of remaining half lemon. Pour half of the dressing over the apple mixture, tossing to combine. Serve over greens, drizzling remaining dressing over salad. Garnish the salad with chopped walnuts and snipped chives.

2 juicy red apples
1/2 c macadamia nuts, chopped
2 Tbsp dried cranberries
8 oz pineapple tidbits, drained (reserve 4 Tbsp juice)
1 lemon, juiced
1/2 c shredded coconut
4 oz whipped cream cheese

Steps:

  • 1. Chop 2 large unpeeled red apples into small cubes. Mix with lemon juice to keep from browning.
  • 2. In a large bowl, mix together apples, macadamia nuts, pineapple tidbits, coconut, and cranberries.
  • 3. In a mixing bowl, whip together cream cheese and 4 Tbsp pineapple juice.
  • 4. Pour the cream cheese mixture into the fruit and stir until combined.
  • 5. I like to present the Waldorf Salad in 20-25 decorative spoons but you can also use small bowls and serve 8-10 people as a side dish.

6 Firm Red Apples
Juice of 1 fresh lemon
Juice of 1 fresh lime
5 stalks of celery
One small jar 4.5 oz of macadamia nuts, whole or pieces
1 head lettuce, sliced one-two inches thick
1 Cup Miracle whip salad dressing to taste
1 lb. Chopped cooked chicken breast
5 Tablespoons maraschino cherries
1/2 Cup coconut
1/2 Cup raisins
1 tsp. cinnamon

Steps:

  • Add cooked and cooled chicken to large bowl. Add cinnamon and turn to lightly coat chicken. Chop apples and add to bowl and mix. Sprinkle with freshly squeezed juice of lemon and lime and mix. Add sliced celery, macademia nuts, coconut and raisins and mix. Toss together with miracle whip. Cut lettuce into large round or half slices and lay flat onto plate. Scoop salad with an ice cream scoop and pile high onto large salad or dinner plates. Garnish chicken, lettuce and plate with maraschino cherries.

1 1/2 pounds red seedless grapes
1 tablespoon confectioners' sugar
1 tablespoon extra-virgin olive oil
1 tablespoon minced shallot
1 tablespoon white-wine vinegar
1/2 teaspoon finely grated lemon zest, plus 2 teaspoons fresh lemon juice
1/4 teaspoon ground cumin
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 celery stalks, thinly sliced crosswise, plus 1/2 cup leaves
1 head frisee, trimmed
1 Honeycrisp apple, thinly sliced
1/2 cup walnuts, toasted

Steps:

  • Roast the grapes: Preheat oven to 350 degrees. Toss grapes with sugar and oil. Roast on a rimmed baking sheet until just starting to wrinkle and burst, 25 to 30 minutes. Let cool.
  • Meanwhile, make the dressing: Combine shallot, vinegar, lemon zest and juice, and cumin in a bowl. Gradually whisk in oil. Season with salt and pepper.
  • Make the salad: toss grapes (without pan juices) with sliced celery and leaves, frisee, apple, and walnuts. Drizzle salad with dressing, and toss to coat.

4 celery ribs, chopped

1/4 teaspoon salt
1 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, toss apples with 1 tablespoon lemon juice. Stir in celery and walnuts. , In a small bowl, whisk the mayonnaise, sugar, salt and remaining lemon juice until blended. Fold in whipped cream. Gently stir into fruit mixture. Refrigerate until serving.
