CHICKEN W/ASIAGO, PROSCIUTTO, AND SAGE image

Number Of Ingredients 7

4 small skinless, boneless chicken breasts pounded to 1/4 inch
6 T (3/4 stick) butter, divided
1/2 C finely grated Asiago cheese
8 think prosciutto slices, folded over crosswise
2/3 C dry white wine
2 t minced fresh sage
4 whole sage leaves (for garnish)

Steps:

  • Preheat over to 375. sprinkle chicken w/salt and pepper. coat both sides with flour, shaking off excess. melt 4 T btr in large skillet over medium-hi heat. add chicken breasts and saute until brown, turning once, about 5 min. transfer chicken to rimmed baking sheet, reserve skillet. sprinkle 2 T cheese over each breast. top each with 2 prosciutto slices. bake until chicken is cooked thru, about 5 mins. meanwhile, add wine, minced sage, 2 T butter to skillet. boil until sauce is reduced to 1/3 C, scraping up brownded bits, about 4 mins. transfer chicken to platter. top each with safe leaf, drizzle pan sauce over and serve.
