BEEF CASSEROLE SUPREME
A unique, savory casserole that is definitely a "comfort food." Easy to make, the light, creamy tomato sauce provides a creative twist on familiar ingredients. First made it over 30 years ago. I haven't a clue now where it came from, but it's well worth a try.

Steps:
- Brown beef and onion in large skillet. If necessary, drain when browned.
- Stir in stewed tomatoes, soup, and seasonings. Simmer 5-10 minutes.
- Stir in sour cream and cream cheese. Add cooked mafalda noodles.
- Turn into 2-quart casserole and bake at 350 degrees for 30-35 minutes.

EASY SUPREME BEEF CASSEROLE

Steps:
- Brown the ground beef, salt and pepper to taste.
- Add onion and tomatoes. Mix till smooth.
- In a separate bowl, Mix cream cheese and sour cream together.
- Layer some prepared noodles on the bottom of a greased 9x13 pan.
- Now add some of the cream cheese mixture. Last, the ground beef mixture.
- Layer until pan is full.
- Sprinkle the top with the cheddar cheese. Bake 30 minutes at 350 degrees.
- Enjoy!

MEXICAN BEEF SUPREME
My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
- While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.

This is a delicious beef casserole that is enhanced with the use of a good red wine. The recipe is simple and you can make it the day before. Perfect for those cold winter nights.

Steps:
- Trim fat from meat and cut into cubes.
- Heat butter and oil in heavy based saucepan and brown meat.
- Remove meat from pan and saute bacon, onion and garlic in the pan drippings.
- Stir in flour and allow to brown.
- Remove from heat and stir in stock, wine,bay leaf,thyme,seasoning.
- Return the meat to pan and simmer for about 1 hour or until meat is tender.
- Stir in mushrooms and cook for a further 15 minutes and serve sprinkled with parsley.

GRANDMA'S GROUND BEEF CASSEROLE
As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix sour cream, cream cheese, and onion in a bowl.
- Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.
