I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. 9 cups sliced pickling cucumbers
1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water
1 cup white vinegar
1/2 cup cider vinegar
2 tablespoons mustard seed
1 teaspoon celery seed
1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Add 3 garlic cloves and 1 bay leaf to each jar. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

This recipe was given to me by my Aunt Sally. It is a very simple way to make great sweet pickles. These have a bite and everyone loves them.

Number Of Ingredients 6

1 (32 ounce) jar sliced dill pickles
2 cups sugar
1 cup white vinegar
2 tablespoons pickling spices
1/2 teaspoon minced garlic
1 cinnamon stick

Steps:

  • Completely drain the jar of dill pickles leaving pickles in the jar. Set aside.
  • Bring all other ingredients to a hard boil.
  • Immediately pour over the pickles in the jar.
  • Recap tightly and turn jar upside down and allow to cool. (This should reseal jar so that they can be stored indefinitely).
  • (I put all the spices, except for the garlic and the cinnamon stick, in a cheesecloth type bag. I press on the bag with a wooden spoon in vinegar/sugar mixture to get more flavor. It isn't necessary, but boiling the spices in a bag keeps them from floating around in the pickles).

I got this recipe from an old family friend. She used to make us these pickles when we were kids. It is a really simple recipe, and the hardest part is not eating the pickles before they are ready. You can add pimentos, sliced bell peppers, or whole garlic cloves to the vinegar solution as alternative options.

1 ⅓ cups white sugar
2 tablespoons salt
1 cup white vinegar
6 cups peeled and sliced cucumbers
2 cups sliced onion

Steps:

  • Stir sugar, salt, and vinegar together in a plastic container with a lid until sugar is mostly dissolved. Place cucumbers and onion in the vinegar solution; stir to coat. Cover container and refrigerate for at least 2 days, stirring occasionally.

2 lbs thinly-sliced vegetables
1 large onion, peeled,and thinly sliced
1/4 cup salt
2 cups white vinegar
1 1/4 cups sugar
2 teaspoons yellow mustard seeds
1 teaspoon celery seed
1 teaspoon dill seed
1 teaspoon turmeric
1/4 teaspoon dry mustard
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a very large bowl, place the vegetables and the sliced onion.
  • Toss with salt and cover with cold water.
  • Allow to stand for 1 hour, then drain thoroughly but do not rinse.
  • In a 3-quart, non-aluminum saucepan, combine vinegar, sugar and spices.
  • Bring to a boil.
  • Simmer 5 minutes.
  • Pour the vinegar mixture over the vegetables, tossing to coat.
  • Allow to stand for 2 hours.
  • Transfer to a non-aluminum container and chill in the refrigerator.
  • Store for up to 1 month in brine in the refrigerator.
