A keto and low carb sugar free frosting sweetened with Stevia

8 ounces Cream Cheese (softened to room temperature.)
1/4 cup Butter (softened to room temperature.)
2 tbsp Greek Yogurt (Milk, Buttercream or similar dairy )
1 tsp Stevia - ( Granular pure Stevia is preferred. We will start at 1 tsp and add additional as needed .)
1 tsp Vanilla Extract

Steps:

  • In a mixing bowl using a stand mixed fitted with a paddle attachment if possible, cream together the cream cheese and butter. Alternatively, you can do this by hand if you desire.
  • When the cream cheese and butter are well blended you can switch to a whisk attachment (or a whisk if by hand) on your mixer. Then whisk in 1 tablespoon of your dairy (Greek Yogurt or alternative) until that is blended.
  • Next, add 1 teaspoon of the Stevia and 1 teaspoon of vanilla extract. Whip or whisk the frosting for about a minute on medium.Test the frosting for sweetness. If additional Stevia is needed, add only a small amount as this will go a long way. Also, if the frosting appears to be too thick for your needs, you can add an additional dairy (no more than 1/2 a tablespoon at a time).If you are looking for a thicker frosting and this becomes difficult to whip, you can switch back from the whisk to the paddle.
  • Continue to whip or whisk the frosting until you reach your desired consistency. This frosting needs to be refrigerated

We are using a Stevia baking blend since Stevia is so much sweeter than other sweeteners. Real the full label on your choice of baking blend to assure that it is free or low in sugar.

Meringue Powder- 3 teaspoons
Stevia Baking Blend product- 3 cups
Cornstarch- 3 teaspoons
Vanilla Extract- 1 tsp
Water- 1/2 cup

Steps:

  • Start by combining your Cornstarch with your Stevia. You can process them on high in a food processor or you can sift them if you have no processor. Our goal result should be something of a confectioners sugar consistency. Set this aside.
  • In a mixing bowl, combine together the water, vanilla and the Meringue powder. Beat this until peaks start to form. You will need a whisk attachment for best results.
  • Once your peaks have started to form, you can switch to a beater attachment on your mixer. Add your dry ingredients from your first bowl to the mixing bowl. Mix until well blended.

½ cup unsalted butter, softened
¼ cup Pyure Organic All Purpose Stevia Blend
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup cornstarch
3 tablespoons Pyure Organic All Purpose Stevia Blend
2 tablespoons unsalted butter, softened
¼ cup milk, or as needed
1 teaspoon vanilla extract
1 drop Food coloring

Steps:

  • Beat butter with Pyure Organic All Purpose Stevia Blend until light and fluffy.
  • Beat in egg until well blended. Beat in vanilla.
  • Whisk flour, baking powder and salt together. Stir into butter mixture in two additions.
  • Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Roll on lightly floured surface or between sheets of waxed paper to 1/4-inch thick.
  • Using desired cookie cutter, cut out desired shapes.
  • Preheat oven to 350 degrees F. Place cookies 2-inches apart on parchment paper lined baking sheets. Bake for 10 to 12 minutes or until golden. Let cool on racks.
  • Glaze cookies with Pyure Sugar Free Cookie Icing.
  • Icing Directions: Beat cornstarch, Pyure Organic All Purpose Stevia Blend and butter with a mixer on medium-high speed until well combined.
  • Gradually add milk and vanilla until smooth. Add more milk if icing mixture is too dry.
  • If adding food coloring, add a drop at a time until desired color is reached.
  • Refrigerate icing for 10 minutes until set.
  • Spread or pipe over cooled Sugar Free "Sugar" Cookies. Use day of.
