GRILLED SPINACH FETA BURGERS

Turkey burgers have their fans, but we prefer feta burgers with ground beef and spinach. We serve them on toasted buns with lettuce, tomato and tzatziki. -Susan Stetzel, Gainesville, New York

1 tablespoon olive oil
2 shallots, chopped
2-1/2 cups fresh baby spinach, coarsely chopped
3 garlic cloves, minced
2/3 cup crumbled feta cheese
3/4 teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
8 whole wheat hamburger buns, split
Optional toppings: refrigerated tzatziki sauce, fresh baby spinach and tomato slices

Steps:

  • In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
2 pounds ground turkey

1 tablespoon oil
1 large onion, chopped
1 pound ground beef
1 teaspoon meat seasoning, or to taste
1 pinch garlic powder, or to taste
1 pinch herbes de Provence, or to taste
salt and ground black pepper to taste
4 eggs
½ cup skim milk
½ cup mayonnaise
2 tablespoons all purpose flour
1 ¼ cups shredded sharp Cheddar cheese
1 pastry for a 9-inch deep dish pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium heat; cook and stir onion until tender and browned, 15 to 20 minutes. Add ground beef and season with meat seasoning, garlic powder, herbes de Provence, salt, and pepper. Cook and stir until beef is browned and crumbly, about 5 minutes. Drain excess fat from skillet.
  • Beat eggs together in a bowl. Whisk in milk, mayonnaise, and flour; sprinkle with salt. Stir in beef mixture and 1 cup of Cheddar cheese. Pour into the pie shell.
  • Bake in preheated oven until a knife inserted into the center of quiche comes out clean, about 45 minutes. Sprinkle remaining cheese on top of the quiche. Allow to stand for 5 minutes before cutting.

1 pkg (10 ounces) frozen spinach
2 lb lean ground beef
1/4 c bread crumbs
1 envelope dry onion soup mix (like lipton)
1 c shredded cheese, like cheddar or pepper jack
freshly ground black pepper to taste

Steps:

  • 1. Thaw spinach and squeeze it dry. It is important to get out all the water you can. Cut or chop spinach fine. I use kitchen scissors. Combine all incredients well. Form into 8 hamburger patties and grill until medium or well done.
  • 2. I often add a pinch of red pepper flakes to this recipe. Serve on buns with your choice of condiments.
