In a hurry? Cake mix and canned pumpkin - that's it! Amazingly simple and they taste wonderful -honestly they're great! Moist and chewy inside, slightly crispy outside. There are other cake mix cookie recipes on Zarr and they're all very good, but this one is my family's favorite. Beginner and experienced chefs can all appreciate the ease of this recipe, plus they sell quickly at bake sales, and children love them.

1 (18 1/4 ounce) box spice cake mix
1 (15 ounce) can solid-pack pumpkin (the small can)
1 cup chopped pecans (optional) or 1/2 cup raisins (optional)
1 cup cream cheese frosting (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray cookie sheets lightly with vegetable spray (Pam).
  • In a large bowl, mix together the cake mix and pumpkin with a fork or mixer until well blended; stir in nuts or raisins, if desired.
  • Drop by large rounded spoonfuls onto the cookie sheet; they don't flatten out much so however you place them on the sheet is pretty much how they'll look after baking.
  • Bake for 8 to 15 minutes, depending on the size of your cookies.
  • Allow cookies to cool on baking sheet for up to 5 minutes before removing to a wire rack to cool completely.
  • Frost, if desired.
  • How many cookies you get depends on how large you make them of course - just increase your baking time if making larger cookies (it's truly difficult to burn these, but they will get crispier & less moist); Mine, made with a medium size cookie scoop, take 13-15 minutes to bake and yield about 3 dozen.

2/3 cup water
1 egg
1/4 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon vanilla
2 cups apples, peeled and sliced
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Blend half a package (approximately 2 1/4 cups) cake mix, water, and egg in a mixing bowl.
  • Beat at medium speed until batter is smooth.
  • Pour half the batter into a greased 9" square pan.
  • Combine remaining cake mix with cinnamon; add melted butter (or margarine) and vanilla.
  • Toss with a fork to form large crumbs.
  • Sprinkle half of crumb mixture over batter in pan.
  • Arrange 1 cup of apple slices over crumb mixture.
  • Carefully spoon on remaining batter.
  • Arrange rest of apple slices over batter.
  • Dot with the butter and sprinkle with remaining crumb mixture.
  • Bake in 350 degree oven 40-45 minutes or until done.
  • Serve warm.

1 spice cake mix, i used duncan heinz
1 - 21 oz can apple pie filling - i chopped the slices up a bit
3 eggs
FROSTING
5 Tbsp unsalted butter
1/2 c packed brown sugar
1/4 tsp salt
3 Tbsp milk
1 1/2 c confectioners' sugar
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
  • 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
  • 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
  • 4. Spread into cake pan evenly.
  • 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
  • 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
  • 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
  • 8. You could also add nuts to the cake or frosting! Enjoy!!!!

Steps:

  • Preheat oven to 350°F.
  • Combine flour, baking soda, baking powder, cinnamon, and salt together.
  • Combine the above mixture with eggs, sugar, and oil in a large mixing bowl.
  • Beat at medium speed for 2 minutes.
  • Mash drained beans and pineapple to the mixture. You could use a blender for this part and probably would be better to get a smooth bean mixture.

  • Mix all ingredients except 1/2 of the pecans; spread between layers, or if a bundt cake style, over the whole thing.

1 box spice cake mix
3 eggs
1/3 c vegetable oil
1 c water
WARM BROWN SUGAR SAUCE
6 Tbsp unsalted butter
2 c brown sugar (light or dark)
1 c half and half -or- 1 small can evaporated milk
1/2 tsp cinnamon, ground
1/4 tsp allspice, ground (optional)
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350-degrees. Coat a 9x13 inch baking pan with butter flavored oil spray.
  • 2. Add cake mix, eggs, oil and water together in a bowl and mix for about 2-minutes. Pour into greased baking pan. Bake according to package directions (approximately 25-minutes baking time). Remove from oven when baking is complete and allow to cool.
  • 3. FOR WARM BROWN SUGAR SAUCE: Melt butter in sauce pan over medium heat. Add the brown sugar, cinnamon and allspice. Stir until butter melts and ingredients are mixed. Add milk and stir with a whisk until smooth. Allow to reach a low boil. Turn heat to low. Stir for one-minute. Remove from heat and allow to sit for one or two minutes. Add the vanilla before serving and stir again. (Store leftover sauce in refrigerator. It will set hard and need to be microwave heated to pour over leftover cake or ice cream)
  • 4. Slice cake and place on serving dishes. (I use a low-rimmed bowl but a soup cup or a plate are equally fine). POUR the warm sauce over the cake and serve, preferably with a spoon so you don't miss even a drop of the deliciousness!

1/2 c water
2 eggs
1 pkg vanilla frosting

Steps:

  • 1. Heat the oven to 350°F. Lightly grease and flour 2 (8 or 9-inch) round cake pans. Combine the cake mix, soup, water and eggs in a large bowl. Pour the batter into the pans.Bake for 25 minutes or until a toothpick inserted in the center of the cakes comes out clean. Let the cakes cool in the pans on wire racks for 10 minutes. Remove the cakes from the pans and let cool completely. Fill and frost with the cream cheese frosting.

buttermilk

1/4 c butter

1/3 c nut meats
3/4 c coconut, flaked

  • 4. Frosting: 1/4 c. butter, melted 1/2 c. brown sugar, firmly packed 3 tbsp. half and half (milk does very well) 1/3 c. nut meats, chopped 3/4 c. shredded or flaked coconut
  • 5. mix the frosting ingredients and spread over cake right after it comes out of the oven and broil in oven (keep door cracked and keep an eye on it) untill nice and bubbly and nuts look toasted...doesn't take very long..then cool and enjoy!

1 c libby's pumpkin pie mix
1 egg
1 c water
FROSTING
1 can(s) orange confetti frosting (walmart)
1 large flat bottom ice cream cone
1 can(s) vanilla frosting
1 bottle green food coloring

Steps:

  • 1. Pre-heat oven to 350 Make about a cup of vanilla frosting and mix the green food coloring until you get the right color. then Put the ice cream cone on a piece of waxed paper and frost. then put in fridge til later.
  • 2. Grease a bundt pan and set aside Mix the cake mix with the other wet ingrediants on medium speed for about 2 minutes. And yes no oil is used, not needed is this. Bake in preheated oven for 40-50 minutes or until tooth pick comes out clean. ( oven temps vary so keep an eye on it after about 35 min.) Let cake cool for 25 minutes then turn upside down on a cooling rack for 2 hours before frosting.
  • 3. warm the Orange confetti frosting in micowave 2-3 seconds. Drizzle frosting over the top of the bundt cake. Add the green stem to the center and sprinkle the package of confetti over the orange frosting, refrigerate for a few hours. Then slice and enjoy...

1 2/3 cups crushed cinnamon graham crackers (about 9 whole crackers)
10 tablespoons (1 1/4 sticks) unsalted butter, melted, divided
2 tablespoons plus 1 cup (packed) golden brown sugar
1 cup all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon (scant) salt
1/4 teaspoon ground allspice
2 large eggs
1 teaspoon finely grated lemon peel
1 teaspoon vanilla extract
2 6-ounce Granny Smith apples, peeled, cored, cut into 1/3-inch cubes
1 1/4cups coarsely chopped walnuts
3 tablespoons sugar

Steps:

  • Preheat oven to 325°F. Butter 13x9x2-inch glass baking dish. Mix graham crackers, 6 tablespoons butter, and 2 tablespoons brown sugar in medium bowl. Press mixture evenly onto bottom of prepared dish. Bake crust until golden brown, about 12 minutes.
  • Whisk flour, cinnamon, baking powder, salt, and allspice in medium bowl; blend well. Using electric mixer, beat 4 tablespoons melted butter, 1 cup brown sugar, eggs, lemon peel, and vanilla in large bowl until mixture is blended and thick, about 4 minutes. Beat in flour mixture. Fold in apples and walnuts. Spoon batter over crust. Sprinkle with 3 tablespoons sugar. Bake cake until golden brown and firm to touch in center, about 38 minutes. Cool cake completely in dish. Cut into squares and serve.
