This recipe came from a friend and is super delicious. It's easy and healthy. I love beans and chicken so this is one of my favorite meals.

1 cup low sodium chicken broth
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
3/4 cup mild salsa
2 garlic cloves, minced
1 lb boneless skinless chicken breast, cut into bite-sized pieces

Steps:

  • In a 13 x 9 inch baking pan, combined the broth, beans, salsa, and garlic.
  • Add the chicken and mix everything together.
  • Bake at 350F for 45 minutes, stirring after the first 20 minutes.

Easy southwest chicken bundles image

Got this from Pillsbury, and it's so easy to make. Great for a light snack, or lunch. I changed it up a bit from the original recipe, but it tastes just as good as the original.

1 large can swanson white chunk chicken, drained, flaked
4 oz reduced-fat cream cheese, softened
1 c favorite picante sauce
1 c reduced-fat, shredded mexican style cheese
1 10 oz pkg pillsbury refrigerated pizza dough

Steps:

  • 1. Heat oven to 425. Lightly spray a lg baking sheet w/ cooking spray. In bowl, stir together chicken, cream cheese, 1/2 cup picante sauce and shredded cheese.
  • 2. Unroll dough onto lightly floured surface, roll dough into 12" square. Cut into 4-6" squares. Place 1/2 cup chicken mix onto each square. Fold dough over filling.
  • 3. Press edges together to seal. Place squares on baking sheet. Bake about 12 mins, or until golden brown. Serve w/ remaining picante sauce.

This chicken chili is very tasty and easy to put together. Perfect for a busy weeknight. It's also healthy!

1 tablespoon olive oil
3/4 cup chopped onion
1/2 teaspoon minced garlic
1 (15 1/2 ounce) can great northern beans, drained and rinsed
1 (15 ounce) can chili beans, undrained
1 (5 ounce) can white chicken meat, drained
1 (4 1/2 ounce) can chopped green chilies
1 cup chicken broth
1/2 teaspoon chili powder
1/2 teaspoon cumin

Steps:

  • Heat oil in large saucepan over medium heat until hot.
  • Add onions and garlic; cook 3 to 4 minutes or until crisp tender.
  • Stir in remaining ingredients.
  • Bring to a boil.
  • Reduce heat; simmer 10 minutes or until hot and slightly thickened.

15 ounces black beans
15 ounces kidney beans
0.75 cups salsa
2 cloves garlic
1 pounds chicken breasts

Steps:

  • 1 Preheat the oven to 350º.
  • 2. In a 13 x 9 inch baking pan, combine the broth, the beans, salsa and garlic. Add the chicken and baste with some of the liquid.
  • 3. Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 minutes.

3 - boneless, skinless chicken breasts
1 - can cream of chicken soup, undiluted, save empty can
1 - can medium salsa, remember empty can?
1/2 pound - sliced salsa jack cheese
1 - 1 1/2 cup crushed tortilla chips

Steps:

  • In a lightly greased 1 1/2 quart casserole dish combine above ingredients, except cheese and chips. Place sliced cheese on top of chicken mixture. Top with the crushed tortilla chips. Bake, uncovered, 1/2 hour at 350 'til hot and bubbly. Serve over cooked rice.
