EASY CREAMY SOUR CREAM CHICKEN CASSEROLE
This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. If you like your casserole's creamy, then this is one you've gotta try! I hope you enjoy it as much as we do!

Steps:
- Preheat oven to 350°F.
- Boil chicken breast until tender; drain and cube.
- Spread evenly over the bottom of a square casserole dish.
- Salt and pepper to taste.
- Mix sour cream and chicken soup in a separate bowl.
- Spread the sour cream and soup mixture over the chicken in the casserole dish.
- Crush the Ritz crackers and spread over top of the casserole.
- Spoon melted butter on top over all.
- Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

- Preheat oven to 400 degrees F (200 degrees C) and line a 9-inch pie plate with thawed pie crust; refrigerate until ready to fill.
- Heat olive oil in a medium skillet over medium high heat. Saute onion and bell pepper for 3 minutes, stirring frequently. Add flour, then cook and stir for an additional 2 minutes. Finally, stir in chicken, salt, nutmeg and pepper and mix well.
- Spread chicken mixture over the bottom of the unbaked pie shell, and top with Cheddar cheese and Swiss cheese. In a small bowl whip together the egg beat, milk and sour cream and pour mixture over chicken mixture.
- Bake at 400 degrees F (200 degrees C) for 20 minutes, then reduce temperature to 350 degrees F (175 degrees C) and bake for another 30 to 35 minutes, or until a knife inserted into the pie comes out clean.

- First, prepare the enchiladas. Set out each tortilla and scoop in cheese, green onion, and canned chicken. I usually eye ball this, but its roughly a little less than 1/2 cup cheese per tortilla.
- Roll up each tortilla once filled and place in a baking dish coated with nonstick spray.
- For the sauce: In a bowl combine the can of cream of chicken soup with the same amount of sour cream.
- Coat the top of the rolled tortillas with the sauce. Sprinkle some cheese on top.
- Bake at 350 degrees for 25 minutes.
- Serve immediately. Enjoy!
EASY CHICKEN PAPRIKA WITH SOUR CREAM

- 1. Mix the paprika, onion powder, sour cream and salt together in a small bowl. 2. Saute bell pepper on high heat. Make it blister a bit Remove from pan 3. Saute thighs until cooked. 4. Add 1/3 C water to steam up brown bits in bottom of pan 5. Add bell pepper and sour cream mixture. 6. Heat and season to taste with salt.
EASY PLEASY SOUR CREAM CHICKEN ENCHILADAS

- Place chicken breasts in a large pot of boiling water until cooked through.
- While chicken is cooking; shred your lettuce, dice your tomatoes, and chop your green onions.
- Preheat oven to 350 degrees.
- Spray an 11 x 13 baking dish with non-stick cooking spray.
- Shred chicken and set aside.
- Combine soup, milk, sour cream, green chilies, cumin and salt and pepper to taste.
- Spread a thin layer of sauce on bottom of baking dish.
- Reserve about a cup of sauce for covering the top.
- Add chicken, green onions and half of 1 cup of cheese to remaining sauce mixture.
- Heat tortillas 20-30 seconds in the microwave.
- Spoon about 1/3 Celsius of mixture into each tortilla and roll them up. Place them seam side down in baking dish.
- Cover with reserved sauce and top with remaining cheese.
- Bake in preheated oven for 20-30 minutes or until hot and bubbly.
- Serve on a bed of shredded lettuce and topped with your choice of garnishes.

- Lightly oil a 13x9" baking dish. Preheat oven to 350 degrees F. In a mixing bowl, toss together the cooked chicken, chopped green chilies, sour cream or mayo, and lime juice; season with cracked or lemon pepper and cumin. Set aside.
- Spread about a spoonful (about 4 oz.) of the enchilada sauce in the bottom of the oiled baking dish. Heat each tortilla in a scant amount of hot light olive oil before you stuff it, till softened. - Make your Quickie Enchilada Sauce: Heat the olive oil in a medium saucepan over medium heat and gently sauté the onion and spices for 5 minutes. Add the garlic, tomatoes, sugar, vinegar, and cilantro, stir and bring to a simmer. Cover and cook 15 to 20 minutes - or if you're really in a hurry, stir together an instant sauce using one of the following:.
- * 16 oz. of your favorite red or green salsa.
- * 1 8-oz. can chopped roasted green chilies, and 1 cup hot chicken broth thickened with sour cream, or a tablespoon or two of sweet rice flour.
