Yellow squash made easy, and put to the side to keep warm so you can tend to other parts of the dinner. It is easy and delicious. Don't use too much cheese; you want to taste the wonderful flavor of the yellow or summer squash!

4 pounds yellow summer squash, sliced
1 small onion, chopped
¼ cup butter, cubed
¼ pound processed cheese food (such as Velveeta®), cubed

Steps:

  • Place the squash and onion into a pot, and pour in enough water just to cover. Bring to a boil, cover the pot, and simmer the vegetables until tender, about 10 minutes. Do not stir. Drain the squash and onion in a colander set in the sink.
  • Gently layer the cooked squash and onions, cubes of butter, and cheese food cubes in a slow cooker. Set the cooker on Low, and cook until the squash are very tender and the butter and cheese have formed a creamy sauce, about 1 hour. Do not stir.

I got this recipe from my fiance's mom -- it's easy and tastes fantastic. It's even better the next day.

1 tablespoon olive oil
2 onions, chopped
2 teaspoons dried rosemary
½ teaspoon ground black pepper
5 cups vegetable stock
1 butternut squash - peeled, seeded, and cut into cubes
2 Granny Smith apples - peeled, cored, and chopped
salt to taste
1 cup shredded Swiss cheese
½ cup finely chopped walnuts

Steps:

  • Heat oil in a large skillet over medium heat. Cook and stir onions in hot oil until softened, 5 to 10 minutes. Stir in rosemary and black pepper; transfer mixture to a slow cooker. Pour vegetable stock, butternut squash, and apples into slow cooker.
  • Cook on Low for 8 hours (or cook on High for 4 hours).
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Puree soup using an immersion blender until smooth. Alternately, puree soup in batches in a food processor until smooth. Season with salt. Ladle soup into oven-safe bowls and sprinkle Swiss cheese and walnuts over the top.
  • Cook soup under the preheated broiler until cheese is hot and bubbling, 1 to 2 minutes.

A very simple Curry that is tasty and filling, using autumnal veg. For variation, throw in some chic peas for added texture and/or red wine for an even more meaty taste. Serves 6-8.

  • Throw all the ingredients (except the yogurt) into the Slow Cooker.
  • Cook on High for 1 hour, then turn down to Low for the remaining 4 hours.
