CHEESEBURGER MEAT LOAF
I created this meat loaf one day when I wanted to make cheeseburgers-my husband's favorite-but it was too chilly to grill outside. I've served it numerous times since then, and it never fails to get rave reviews. Even your most finicky eater will enjoy this oven-baked main dish. - In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. Roll up loaf, jelly-roll style, starting with a short side and pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, in a greased 11x7-in. baking pan., Bake at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Cut the reserved cheese slices in half diagonally; place on top of loaf. Return to the oven for 5 minutes or until cheese is melted. Let stand for 10 minutes before slicing.

CROCK POT INSIDE-OUT CHEESEBURGER MEATLOAF

- Mix beef, onion, egg, soup mix, oats, and 2 tablespoons catsup in a bowl. Divide into 2 equal balls. Flatten one of the balls on a sheet of aluminum foil. Squirt the flattened meat with catsup and mustard to within 1/2 inch of the edge. Place pickle slices on the meat and top with cheese.
- Flatten the other ball of meat and place on top of the first section. Pinch edges shut. Cover the entire thing with the foil.
- Take 2 pieces of foil about 18 inches long and fold lengthwise till they're about 2-3 inches wide. These will be handles. Criss-cross them in the crock pot. Place the foil package on top.
- Cook on low about 6 hours.
- Notes: If you don't like too much salt, cut the amount of soup mix in half. Also, you may want to soak the oatmeal in milk or broth to make the meatloaf moister.

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.
