EASY SHRIMP TACOS
I love preparing these easy-to-make shrimp tacos. Hatch chiles are a staple ingredient in my home state of Texas, and this was the very first recipe that I conquered with them. Mix and match your favorite toppings-salsa and avocado would be perfect additions. -Deborah Jamison, Austin, Texas

- In a small bowl, combine yogurt, cilantro, lemon juice, lime juice and 1/8 teaspoon salt; set aside. In a large skillet, heat oil over medium-high heat. Add peppers and onion; cook and stir until crisp-tender, 4-5 minutes. Add shrimp, garlic, cumin and remaining ¼ teaspoon salt. Cook and stir until shrimp turn pink, 2-3 minutes. Remove from the heat. Serve in tortillas with lettuce, yogurt sauce and, if desired, lime wedges.

- Combine onion, carrots, and cilantro in a bowl.
- Mix chili powder, cumin, and cayenne pepper together in a small bowl. Coat shrimp in the mixture.
- Heat olive oil in a small skillet over medium heat. Add shrimp; cook for 2 minutes. Turn and cook until pink, about 2 minutes more.
- Wrap tortillas in damp paper towels; microwave until warm, 15 to 30 seconds.

EASY MANGO SHRIMP TACOS

- To Make The Easy Mango Shrimp Tacos: Toss the shrimp in a large bowl with the taco seasoning until the shrimp are evenly coated. Heat olive oil in a large saute pan over medium-high heat. Add shrimp and saute for 4-6 minutes, stirring occasionally, until the shrimp are completely cooked through and opaque inside. Remove from heat, transfer the shrimp to a separate plate, and set aside. To assemble your tacos, portion the shrimp evenly between 6-8 flour tortillas, topped with a few spoonfuls of mango salsa. Then drizzle with the sweet chili lime crema to taste. Add optional toppings if desired. Serve warm. To Make The Sweet Chili Lime Crema: Whisk all ingredients together until combined. Taste, and add extra salt or honey if needed.
EASY SHRIMP TACOS
This is a light but filling recipe that will be good on a hot summer day. This recipe is best if it is allowed to chill before serving. If you have started with cold ingredients it can be served immediately. You can use Mild or Hot salsa depending on your personal taste. I do not recommend processed salsa from a jar. Splurge on the fresh refrigerated salsa or even make your own.

- Cut shrimp into bite sized pieces.
- In a bowl toss together shrimp, avocado, red onion, salsa and cilantro.
- Drizzle the lime juice over the mixture and toss well.
