1 lb lean (at least 80%) ground beef or chopped boneless skinless chicken breasts
1 box (8.7 oz) Old El Paso™ Soft Taco Bake® dinner kit
1 cup water
1 can (15 oz) Progresso™ kidney beans, drained, rinsed
1 jar (16 oz) Old El Paso™ Thick 'n Chunky salsa
1 cup shredded Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 400°F. In 10-inch nonstick skillet, cook beef or chicken, stirring occasionally, until thoroughly cooked; drain. Stir in seasoning mix (from dinner kit), water and half of the cheese sauce (from dinner kit). Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-high. Simmer uncovered 4 minutes, stirring occasionally. Stir in kidney beans and remaining cheese sauce; heat until hot.
  • In ungreased 2-quart casserole, place 1 tortilla (from dinner kit). Layer with 1/4 of the salsa, beef mixture and cheese. Repeat layers, using up ingredients and ending with cheese on top.
  • Cover; bake 17 to 22 minutes or until cheese is melted. Let stand 5 minutes.

2 lbs ground beef
1 can corn (undrained (or you can use 2 cups of frozen corn and 1/4 cup of water))
2 boxes corn muffin mix (+ ingredients listed on the box)
16 oz salsa (14-16 oz)
1 cup Cheddar cheese (shredded)
*Feel free to add whatever else you like- olives (green onions, diced tomatoes etc.)

Steps:

  • Heat the oven to 375°F.
  • Brown the ground beef over medium-high heat. Rinse and drain.
  • Add the corn and salsa to the beef- mix until combined.
  • Pour the beef mixture into a 13 x 9 casserole pan.
  • Sprinkle with cheese.
  • In a separate bowl, mix the corn muffin mix according to the package directions. Spread the batter evenly on top of the beef mixture.
  • Bake for 25-30 minutes or until the topping is golden brown.

1 (1.25 ounce) package taco seasoning
1 (8 ounce) package refrigerated crescent roll dough
1 (14 ounce) can refried beans
1 cup sour cream
1 cup salsa, drained slightly

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a large deep-dish pie pan with cooking spray.
