2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

4 boneless, skinless chicken breast halves (about 1 3/4 pounds)
1 tablespoon plus 1 1/2 teaspoons olive oil
Potatoes:
14 ounces small red potatoes, quartered
4 teaspoons olive oil
1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
Salad:
2 slices whole-wheat bread
3 teaspoons chopped garlic
1-2 anchovy fillets, sliced
Juice of 1/2 lemon (about 2 tablespoons)
2 tablespoons extra-virgin olive oil
1/8 teaspoon salt
8 romaine lettuce leaves, cut into bite-size pieces
Freshly ground black pepper

Steps:

  • Chicken:
  • Mix lemon juice, basil, oregano and garlic. Season chicken with salt and pepper. Heat oil over medium heat in a large skillet. Cook chicken 8 minutes; turn and cook 5 minutes more. Add lemon-juice mixture and stir up anything stuck to skillet. Reduce heat and cover; simmer until cooked through, about 6 minutes.

1/4 cup butter

  • to Roast the garlic -- cut the top off and place in foil. Coat with good olive oil and salt and pepper. Roast at 375 for about an hour. Garlic should be golden brown and smell slightly sweet. Sit aside untill the potatoes are done.
  • peel and cube the red potatoes.
  • put in a pot with cool water to cover, add a generous pinch of kosher salt. bring to a boil and cook untill soft. you can test with a fork for tenderness.

I tried a basic roasted potato recipe many years ago, and needed to crank up the flavor. My kids come running when they smell these little starch bombs cooking. You can adjust any of the spices, based on what your taste buds like.

5 lbs red potatoes (NOT pre-bagged, hand picked, the smaller the better)
4 tablespoons olive oil
1 tablespoon oregano
1 tablespoon rosemary
1 teaspoon chili powder
1 teaspoon ground ginger
1 teaspoon red cayenne pepper
2 teaspoons garlic powder or 4 large cloves, finely minced
1 teaspoon ground cumin
2 teaspoons coarse sea salt

Steps:

  • Pre heat oven to 425 F.
  • Wash Potatoes. Have a large bowl with cold water near your cutting board. Leaving skins on, cut potato in half, then cut each half into 8 wedges. Easiest way is to cut the half in a cross pattern, then cut another cross pattern. Place cut potatoes into cold water bath.
  • Drain potatoes into colander. Shake off all excess water. Wipe out large bowl until dry. Put drained potatoes back into bowl.
  • Add all other ingredients. Using a large spoon, mix until all potatoes are completely, and evenly coated.
  • Place potatoes on a cookie sheet, in a single layer. This is ALOT of potatoes, so you may need 2 sheets. I needed to use 2 ovens.
  • Cook for 25 minutes. Flip potatoes. Cook for 15 minutes. Remove from oven and re-season with salt to taste. Serve.
  • Eat it! Ketchup has never been so happy!

1 1/2 lbs. small red or Yukon gold potatoes, quartered
1/4 cup FRENCH'S® Dijon Mustard
1/3 cup olive oil
2 tsp. dried rosemary, thyme or oregano leaves
Salt and pepper to taste

Steps:

  • PLACE potatoes in large baking dish.
  • WHISK remaining ingredients in measuring cup until well blended. Drizzle over potatoes. Toss to coat.
  • BAKE at 425°F for 30 to 40 min. stirring often until potatoes are tender
