Steps:
- Preheat the oven to 350°F.
- Cut about a half inch off the top of the garlic bulb.
- Place the bulb in a small baking dish. Drizzle the top with the olive oil.
- Cover the dish with aluminum foil, and bake for 1 hour.
- Set the butter out to soften as you put the garlic in the oven.
- When the garlic is done, let it cool enough to handle. You should be able to just squeeze the cloves out of the husk.
- Put the softened butter and the garlic cloves in a mixing bowl, and mix together until thoroughly integrated.
- To store, scrape the mixture onto a piece of parchment or wax paper, roll into a fat, sausage shaped log, and the twist the ends shut.

- Remove papery outer skin from garlic bulb (do not peel or separate cloves). Cut top off bulb; brush with oil. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Place 1 cup broth in a blender. Squeeze softened garlic into blender; cover and process until blended. Drain potatoes; place in a large bowl. Add the butter, pepper, salt, garlic mixture and remaining broth; beat until smooth.

ROASTED GARLIC STUFFED STEAK WITH GARLIC MASHERS AND BALSAMIC CREAM SAUCE(VERY EASY)

Steps:
- Marinate the steaks overnight in olive oil, sea salt and fresh cracked pepper.
- You can utilize any fresh herbs you have in your garden or local market such as rosemary.
- Take the steaks out and let them rest about an hour before you start to work with them.
- In the meantime, fire up the oven to 350 degrees F.
- Take your garlic bulbs and slice them in half diagonally.
- Season with olive oil and sea salt.
- Roast on a pan in the oven for about 15 minutes or until the garlic is nice and golden brown and your house smells heavenly.
- Take out and set aside.
- Heat your saute pan with some olive oil and throw in about 6 cloves of fresh chopped garlic when hot.
- Add spinach and saute until spinach is just wilted.
- Season with salt and pepper.
- Chop up the sun-dried tomatoes and toss with the spinach.
- When the spinach has cooled, throw in the brie and the roasted garlic.
- You can easily pull the roasted garlic from the'husk' by using a toothpick to pull it out.
- Mix together very well!
- Season with salt and pepper.
- You can also throw in a teaspoon or so of fresh rosemary at this point.
- Set aside.
- Take your steaks and cut a slit into the side of them, just as you would with stuffing pork chops.
- Carefully stuff the steaks with your roasted garlic stuffing.
- Throw those guys on the BBQ for about 3-4 minutes per side pending your guests preference.
- I serve these steaks over garlic mashers which I usually just throw in an extra bulb of garlic to roast when making the stuffing and mash it all up with some fresh potatoes, butter and cream.
- A little parsley to garnish.
- For the sauce, take 4 tablespoons of butter and melt in a saucepan over low heat.
- Add about 6 cloves of fresh chopped garlic, 1/4 cup of cream and 4 tablespoons of good quality balsamic vinegar.
- Throw in a sprig of fresh rosemary and reduce the sauce by about 1/3.
- Take out the rosemary.
- To plate, place lean against a heap of the garlic mashers and drizzle the sauce around the plate and over the potatoes.
- Garnish with fresh rosemary.
- It is excellent to have a nice fresh loaf of bread to serve with this.
- I also BBQ up some fresh local corn on the grill to accompany this meal.
- It is a fairly easy and gourmet meal to prepare.
- You can even make the stuffing the night before.
- Enjoy!
- And long live garlic!
SUNNY'S EASY ROASTED GARLIC AND PUMPKIN HUMMUS
Steps:
- For the roasted garlic: Preheat the oven to 375 degrees F.
- Place the olive oil and garlic in a ramekin or small baking dish and roast, making sure the garlic does not begin to brown but just turns a light golden color and becomes tender, 15 to 20 minutes.
- For the hummus: Add the roasted garlic cloves plus 2 tablespoons of the oil from the ramekin (reserve the remaining oil) to a food processor along with the garbanzo beans, pumpkin puree, lemon juice, tahini, pumpkin pie spice and a nice pinch of salt. Blend until smooth, then add a bit more of the roasted garlic oil to smooth out the texture. Taste and add a bit more salt and lemon juice if needed. Spoon into a bowl and pour any remaining olive oil over the top; cover and refrigerate at least 2 hours.
- For the pumpkin seed garnish: When ready to serve, add the pumpkin seeds and a pinch of salt to a saute pan on medium-high heat and toast, tossing, until the seeds are fragrant and develop a bit of a sheen, about 4 minutes. Season with a pinch of salt.
- Sprinkle the toasted pumpkin seeds over top of the hummus and serve slightly chilled or at room temperature.

- to Roast the garlic -- cut the top off and place in foil. Coat with good olive oil and salt and pepper. Roast at 375 for about an hour. Garlic should be golden brown and smell slightly sweet. Sit aside untill the potatoes are done.
- peel and cube the red potatoes.
- put in a pot with cool water to cover, add a generous pinch of kosher salt. bring to a boil and cook untill soft. you can test with a fork for tenderness.
- drain off water and return to the pot. Put back on burner over minimum heat add the butter, cream and mash. Add cream cheese, rasted garlic with more salt and pepper. Mash untill desired consistancy. Taste and adjust salt and pepper as desired.

- Preheat oven to 325°F.
- Remove the loose, outer layers of papery skin from the garlic bulb.
- Slice off the top of the bulb, about 1/4 - 1/2. Cut enough to expose the top of the cloves but still leave the bulb intact.
- Tear off a 12-inch square piece of foil, place the garlic bulb in the center and drizzle it with a Tablespoon of olive oil.
- Bring the edges of foil up and around garlic, wrapping tightly, and bake in the oven at 325° F for 35 minutes.
- Remove packet and carefully unwrap garlic.
- Squeeze each clove of garlic out of it's skin and use as needed or store in a zip-top baggie in fridge or freezer for later use.

EASY ROASTED-GARLIC FOCACCIA

- For the Focaccia: Adjust oven rack to center position and preheat oven to 350°F (177°C). Remove 4 cloves garlic from head and set aside. Place remaining head in the center of a sheet of aluminum foil. Drizzle with 1 tablespoon (15ml) olive oil and season with salt. Wrap tightly with foil and place in an oven-safe cast iron, carbon steel, or stainless steel skillet, then transfer to oven. Roast until garlic is completely tender, about 1 hour. Remove from oven and refrigerate until ready to use the next day.
