1 package yellow cake mix (regular size)
5 cups diced fresh or frozen rhubarb
1 cup sugar
1 cup heavy whipping cream

Steps:

Prepare cake batter according to package directions. Pour batter into a greased 13x9-in. baking dish. Spread rhubarb over batter. Sprinkle with sugar; pour cream over top. Do not mix. , Bake at 350° for 35-40 minutes or until a toothpick inserted into the cake comes out clean. Serve warm or cooled.

1 package (3 ounces) raspberry gelatin
1/3 cup sugar
1 package yellow or white cake mix (regular size)
1 cup water
1/3 cup butter, melted
Ice cream, optional

Steps:

Place rhubarb in a greased 13-in. x 9-in. baking dish. Sprinkle with the dry gelatin powder, sugar and cake mix. Pour water evenly over dry ingredients; drizzle with butter. , Bake at 350° for 1 hour or until rhubarb is tender. Serve with ice cream if desired.

1 box yellow cake mix (standard 2 layer size)
ingredients called for on cake mix box
6 c fresh or frozen rhubarb, diced
1 c sugar
1 c heavy cream or half and half

Steps:

1. Preheat oven to 350 degrees. Grease a 9 by 13 inch pan and set aside. Mix cake as directed on package, using ingredients called for on the box. Pour batter into prepared cake pan. Set aside.
2. Sprinkle rhubarb pieces evenly over cake mix. Next sprinkle sugar on top of rhubarb. Then slowly pour cream or half and half over everything being careful not to push rhubarb to sides or center. Do not mix. Bake for 35-40 minutes or until cake tests done. Serve warm as is or cool and top with whipped topping.
