Easy Red Beans and Rice image

This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use turkey kielbasa to cut down on the fat, but not the flavor. Season with hot pepper sauce if you like.

2 cups water
1 cup uncooked rice
1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices
1 onion, chopped
1 green bell pepper, chopped
1 clove chopped garlic
2 (15 ounce) cans canned kidney beans, drained
1 (16 ounce) can whole peeled tomatoes, chopped
½ teaspoon dried oregano
salt to taste
½ teaspoon pepper

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a large skillet over low heat, cook sausage for 5 minutes. Stir in onion, green pepper and garlic; saute until tender. Pour in beans and tomatoes with juice. Season with oregano, salt and pepper. Simmer uncovered for 20 minutes. Serve over rice.

1 cup uncooked long-grain white rice
2 cups water
2 tablespoons butter
1 onion, chopped
½ green bell pepper, chopped
16 ounces smoked sausage, thinly sliced
1 (15 ounce) can kidney beans, drained
1 (14.5 ounce) can diced tomatoes, undrained

Steps:

  • Bring the rice and water to boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
  • Melt butter in a skillet over medium heat. Stir in onion and green bell pepper, and cook until tender. Stir in sausage, and cook until evenly browned. Mix in beans and tomatoes, and continue cooking until heated through. Serve skillet mixture over the rice.

2 tablespoons olive oil
1 pound andouille sausage, sliced on the bias 1/2-inch-thick
1 green bell pepper, seeded and chopped
1 celery stalk, chopped
1/2 cup chopped white onion
Kosher salt and freshly ground black pepper
One 15.5-ounce can red kidney beans, liquid reserved
2 cloves garlic, grated on a rasp or minced
1 smoked ham hock
4 cups cooked white rice
Hot sauce, to taste

Steps:

  • Add the olive oil and sausage to a Dutch oven over medium heat. Cook, stirring, until the sausage releases some fat and begins to curl a bit on the edges, 3 to 5 minutes. Add the bell pepper, celery, onion, a pinch of salt and plenty of hefty grinds of black pepper (more than usual!). Cook, stirring, until the veggies are tender and the celery and onion are translucent and beginning to brown, 3 to 5 minutes. Stir in the beans and their liquid, garlic and ham hock.
  • Add 1 cup water and bring to a boil. Lower to a simmer, then cover and cook until the beans are very tender, about 30 minutes. Serve over white rice with a shake of hot sauce.

1 garlic clove, minced
1 bay leaf
1 -2 teaspoon salt

1 (15 ounce) can kidney beans (do not drain) or 1 (15 ounce) can pinto beans (do not drain)
4 cups cooked brown rice
1 cup sharp cheddar cheese, shredded
sour cream (to garnish)

Steps:

  • In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.
  • Add salt, pepper, bayleaf, diced tomatoes and beans. Simmer 20 minutes on low.
  • Remove bay leaf, mash about 1/2 of the beans and tomatoes.
  • Add rice, stir until combined.
  • Sprinkle on cheddar cheese, cover and allow to cook on low until cheese is melted.

6 cups cooked white rice
2 tablespoons extra virgin olive oil
2 tablespoons garlic, minced
1 large onion, chopped
1 large green bell pepper, chopped
2 large celery ribs, chopped
1 1/2 cups vegetable broth (add more broth as needed) or 1 1/2 cups chicken broth (add more broth as needed)
2 bay leaves
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme

1 tablespoon dried parsley
1 1/4 teaspoons cajun seasoning (Recommend Tony Chachere's)

  • Prepare your rice as directed while meal is simmering.
  • Olive oil in dutch oven or large skillet, medium-low heat.
  • Add minced garlic and cook 1-2 minutes.
  • Add chopped onion, bell pepper, and celery, saute for 6-8 minutes.
  • Add spices and broth, stirring well.
  • Add sausage and washed red kidney beans and fold in until well mixed.
  • Simmer for 15-20 minutes - cooking out most liquid
  • Taste test - This is the time to add a little more cajun spice.

3 (15 ounce) cans light kidney beans, drained and rinsed
3 (15 ounce) cans dark red kidney beans, drained and rinsed
1 (16 ounce) can chicken broth
1 cup onion, diced
1 garlic clove, minced
2 teaspoons cajun seasoning (or use other spices)
1/4 teaspoon thyme
2 bay leaves
1/4 teaspoon basil
cayenne pepper
salt & pepper

Steps:

  • Put beans and chicken broth in slow cooker on high.
  • Cut sausage into medallions, and cook in a large frying pan until lightly crispy on outside.
  • Add onion and garlic to the pan and saute in the sausage grease.

1 lb jimmy dean sausage {maple flavored)
3 can(s) red beans
3 pkg brown gravy mix
3 Tbsp creole seasoning
1 tsp ground, black pepper (optional)
3 c water
2 pkg success rice, cooked and drained

Steps:

  • 1. Cook rice, drain and put aside
  • 2. In a large skillet or dutch oven, brown sausage...Drain if you need to.
  • 3. Add in the three cans of red beans. You do not need to drain them
  • 4. Mix the three packages of gravy mix with the three cups of water. Stir well and pour into the bean mixture.
  • 5. Stir until mixture thickens....Add creole seasoning and pepper (if needed). Stir in rice. Serve with hot bread and a salad....Wonderful comfort food...

1 lb - smoked sausage (hillshire farms, bryan, etc..)
4 cups - cooked rice

Steps:

  • cut sausage into bite size pieces
  • add sausage, beans and rotel to a large saucepan or skillet - if you need more liquid, add a little water - cook for 30-45 minutes until sausage is cooked through -
  • cook rice according to package directions
  • mix sausage mixture and rice together - enjoy!
