POTATO CORN CHOWDER (CROCK POT)

I developed this recipe last summer to use up an overabundance of sweet corn and other fresh summer vegetables. This makes a lot of soup, so luckily it reheats well!

Number Of Ingredients 15

6 cups fresh corn (about 12 ears)
1 cup onion, chopped
10 ounces potatoes, diced
1/2 cup red bell pepper, chopped
1 cup fresh green beans, cut into 1 inch pieces
1 cup carrot, sliced
1 cup celery, chopped
1 chili pepper, chopped
1 (14 1/2 ounce) can vegetable broth
2 cups water
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon fresh ground black pepper
1 teaspoon dried basil
cayenne pepper, to taste

Steps:

  • Place everything in a 6 quart crock pot and mix together.
  • Cover and cook on low for 8-10 hours (you can't really cook this too long!).

This is a chowder that uses ingredients that I almost always have on hand, so it is quick and easy to throw together before work, and come home to on a nice fall evening. Relatively easy to double as well for extra large families or get togethers.

1 (16 ounce) bag frozen hash brown potatoes, thawed
1 (15 1/4 ounce) can whole kernel corn, undrained
1 (14 3/4 ounce) can cream-style corn
1 (12 ounce) can evaporated milk
1 medium onion, chopped
8 slices bacon, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper

Steps:

  • Mix all ingredients together in crock pot and cook for 6-8 hours on low.
  • Serving Suggestion: Top bowls of chowder with a little extra crumbled bacon and a little shredded cheese. Yum!

I don't remember where I got this recipe, but it is on of my favorites. As a working mom, I love to come home to a meal ready in the crock pot. Add a salad or some sandwiches on sourdough bread, and you've got a wonderful winter meal. Don't forget to take some to work for lunch tomorrow!

5 potatoes, peeled and cubed
2 onions, chopped
2 cups ham, diced
3 stalks celery, chopped
1 (15 1/4 ounce) can whole kernel corn, undrained
2 tablespoons butter (or margarine)
1/2 teaspoon salt (adjust to taste)
1/8 teaspoon pepper (adjust to taste)
2 chicken bouillon cubes
2 cups approx water (enough to cover, see step 1 below)
1 (12 ounce) can evaporated milk

Steps:

  • In slow cooker place the potatoes, onions, ham, celery, corn, butter or margarine and salt and pepper. Add water to cover and add two bouillon cubes.
  • Cook on low setting for 8 - 9 hours. Stir in the evaporated milk, and continue to cook for 30 more minutes.

This is really good to make when it is cold outside, and you want something hot and yummy when you get home from work.

salt and pepper to taste
2 cubes chicken bouillon
1 (12 fluid ounce) can evaporated milk

Steps:

  • In a slow cooker, place the potatoes, onions, ham, celery, corn, butter or margarine and salt and pepper to taste. Add water to cover and two bouillon cubes.
  • Cook on low setting for 8 to 9 hours and then stir in the evaporated milk. Cook for 30 more minutes.
