EASY PINEAPPLE CASSEROLE
A wonderful blend of savory cheese and sweet pineapple. Excellent side dish, especially for ham or pork. Not too sweet. Serve it hot, warm, or even room temperature. All my friends have requested this recipe and serve it with their Easter dinners! Yum!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix pineapple tidbits and crushed pineapple together in a bowl and layer into the bottom of a 9x13-inch glass baking dish. Mix sugar and flour together in a bowl and sprinkle mixture over pineapple. Spread Cheddar cheese on top. Cover everything with crushed crackers. Drizzle with melted butter.
- Bake in the preheated oven until bubbly, 30 to 40 minutes. Serve hot, warm, or at room temperature.

EASY PINEAPPLE, KIELBASA AND RICE CASSEROLE
After researching many pineapple casserole recipes on this site, I couldn't find exactly what I was looking for, so I created this one with inspiration from a somewhat similar recipe. I've made it twice now, and am happy with the current results.

Steps:
- Preheat oven to 350 degrees.
- In an oven safe 9x11x2" baking dish pour undrained pineapple and 1 cup of water. Add uncooked rice, onion, bell pepper and 1 tblsp of the brown sugar. Stir thoroughly. Top with kielbasa coins and sprinkle with remaining brown sugar. Cover with aluminum foil and bake for approximately 60 minutes.
- Note: Cooking time may depend on the brand of long grained white rice you use. Check after 45 minutes. I do not recommend Minute Rice.
YUMMY & EASY SWEET POTATO PINEAPPLE CASSEROLE
Love this recipe. Super simple. Even my husband who is not a sweet potato fan loves to eat it.

- 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish
- 2. In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
- 3. Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
- 4. Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.

- Combine sugar and butter in a medium mixing bowl; beat with an electric mixer until smooth and creamy. Mix in undrained pineapple, eggs, nutmeg, cinnamon, and salt until well combined. Use a spoon to fold in bread cubes, then stir in pecans and coconut. Pour into the prepared casserole dish.
- Bake in the preheated oven until browned and bubbly, 45 to 55 minutes.
