6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

EASY DILL PICKLES



Easy Dill Pickles image

When canning any vegetable it is highly recommended that you hot water bath them. Pickles should be boiled in the jars for ten full minutes. If you add more water to the pot, wait until boil starts again to resume timing.

4 dozen pickling cucumbers (Pickling cucumbers are cucumbers that are not less than 3-inches long and not more than 4-inches)
1 bunch dill
1 quart cider vinegar
8 cups water
1 cup pickling salt
1 garlic clove, Peeled

Steps:

  • Wash the cucumbers and remove any stems.
  • Cover with cold water and refrigerate overnight or for several hours.
  • Pack the cucumbers into pint jars as tightly as possible.
  • Poke in 2 springs of dill.
  • Bring the cider vinegar, water, salt and garlic cloves (12 to 16 cloves depending on your taste) to a boil.
  • Boil for 2 minutes.
  • Fish out the garlic cloves with a slotted spoon and put one in each jar (or to taste) while the brine cools slightly.
  • Pour the hot brine into the jars and seal.

40 fresh dill sprigs
4 garlic cloves, sliced
4 quarts water
2 cups cider vinegar

  • Cut each cucumber lengthwise into six spears. In a large bowl, combine cucumbers, dill and garlic; set aside. , In a Dutch oven, combine remaining ingredients. I got this recipe from an old family friend. She used to make us these pickles when we were kids. It is a really simple recipe, and the hardest part is not eating the pickles before they are ready. You can add pimentos, sliced bell peppers, or whole garlic cloves to the vinegar solution as alternative options.

Pickling vegetables refers to the simple process of submerging them in a salt and water solution (brine) or an acidic ingredient like vinegar. In very simple terms, the good bacteria that exists naturally on vegetables consumes the starches/sugars in the vegetable and secretes acids (namely lactic acid) that prevent spoilage. More importantly, the process adds flavor to vegetables, gives them brightness and acidity and, in some cases, increases their vitamin content! At the restaurant, after making these pickles, we cut them into spears; batter dip and deep fry them and serve them with spicy mayonnaise. Indulgent and delicious!

3 1/2 ounces sea salt (about 1/3 cup plus 1 tablespoon)
1/2 cup apple cider vinegar
8 cups bottled water
1 1/2 pounds kirby cucumbers, thoroughly washed and dried
Few sprigs fresh dill, washed and dried

Steps:

  • Mix the sea salt, apple cider vinegar, and water and bring to a boil. Simmer for 5 minutes. Remove the brine from the heat and allow it to cool slightly. Arrange the cucumbers upright in a container large enough to hold the brine. Place the dill sprigs in amongst the cucumbers in the jars. The cucumbers should be fitted tightly and should come within 1/2-inch of the top of the container.
  • Fill the container with the brine to the top and tap on a flat surface to remove any possible air bubbles.
  • The pickles will last for up to a few weeks.

  • Rinse and drain well.
  • Mix Vinegar and Sugar till sugar is dissolved.

  • Put the vinegar, sugar, salt, turmeric and 3 cups water in a medium saucepan. Bring to a boil and stir until the sugar and salt dissolves, then reduce the heat and keep warm.

6 cups water (I use distilled bottled water)
1/4 cup kosher salt (use only kosher salt)
2 tablespoons white vinegar
2 lbs small cucumbers, thoroughly scrubbed
1/3-1/2 cup coarsely chopped fresh dill (for a stronger dill flavor increase to 3/4 cup)
8 large fresh garlic cloves (coarsely chopped or sliced, use more for a stronger garlic taste)
8 whole black peppercorns

Steps:

  • Clean the glass jar and lid thoroughly in your dishwasher or with hot soapy water.
  • Combine the water, salt and vinegar in a saucepan; bring to a boil over medium heat.
  • Remove from heat; cool to room temperature.
  • Pack the cucumbers and the remaining ingredients in a 2-quart (2 litre) glass jar, and pour brine (water/vinegar mixture) over them, covering the cucumbers completely.
  • Store, covered in the the refrigerator.
  • The pickles will be ready in 7 days, but the longer you leave them in the refrigerator the better they will be and will keep refrigerated for months (if they last that long!).
  • **NOTE** since the peel is eaten on these pickles, make certain to wash and scrub the outside of the cucumbers well to remove any dirt, I use a small nail brush to scrub the outsides.

1 teaspoon red chile flakes, optional
4 to 5 Kirby cucumbers, quartered into spears to fit your jars OR 3/4 of a pineapple, cut into spears to fit your jars

  • In a nonreactive stockpot over medium-high heat, bring the vinegar, water, sugar, salt, peppercorns and bay leaf (and chile flakes, if using) to a boil, stirring until the sugar dissolves. Add the cucumbers (or pineapple), then remove from the heat and let cool completely. Transfer to an airtight container and refrigerate until serving. Drain before serving. (Pickles keep, refrigerated, about 2 weeks.)

Steps:

  • Spread each slice of the salami with a thin layer of cream cheese to within 1/4-inch of the edges.

EASY SPICY FRIED PICKLES WITH GARLIC MAYONNAISE

Ok ... So I was watching food network with a friend tonight and they had on "Unwrapped" ... fried pickles. Well, it reminded me of my best friend whose Mom showed me how to make fried pickles a few years back, and I love them. She used small round slices of dill pickles, Italian bread crumbs (but I changed to panko), and then a garlic spicy aioli and they were amazing. Rather than fries, try a few of these with your bratwurst or with a burger and what a nice change. Just something a bit different. Well I haven't made them in over a year and it made me realize what a nice recipe it was and how much I missed making them. They are so easy, but so good and the spicy mayo really makes the dish.

1/2 cup mayonnaise
1 teaspoon minced garlic
1/2 teaspoon lemon juice
1 (32 ounce) jar dill pickle slices
1 cup vegetable oil (approximately 1/2-inch in a saute pan (I like my cast iron for this, but use whatever you have)
1/2 cup flour
1/2 teaspoon cayenne pepper (go easy if you don't want too much spice)
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 cup panko breadcrumbs (put in the mini food processor to grind up slightly)
2 eggs, beaten

Steps:

  • Aioli -- just mix the mayonnaise, garlic and lemon and put in a small bowl and cover and refrigerate.
  • Pickles -- In a large baggie I add the flour, salt, black pepper and cayenne and mix well. Then add in the pickles (Note: I like to dry off the pickles first -- you don't want them wet) and lightly toss. Make sure to dust off most of the flour. Set on a plate for Part II.
  • Pickles Part II -- Grind the panko crumbs in a small food processor until you have a fine crumb mixture. Now in 2 bowls add the egg to one bowl and the panko crumbs to the other one. Dredge the pickles already dusted in flour in the egg and then into the panko crumbs to coat well and set on a plate ready to be fried.
  • Pickles Part III -- In a large frying pan heat up the oil to 350 degrees or medium high heat. Now add 10 or so pickles at a time and fry until golden brown on each side. They only take a few minutes per side. Remove to a plate lined with a paper towel to let drain.
  • Serve warm with the garlic aioli dip. A great change from fries with ketchup.

1 european seedless cucumber somewhat thinly sliced (meaning not see thru thin and not fat)
2 full thin slices of a small sweet onion
1 small clove of garlic thinly sliced
1 tablespoon of pickling spice
1/2 teaspoon of dry dill
1/4 tsp. of cinnamon
4 tablespoons of water
1 cup of white vinegar
12 single packets of splenda (optional - you may use less depending on the sweetness you like)

Steps:

  • 1. Put 1 Tablespoon of Pickling Spice, 1/4 Tsp. of Cinnamon and The Dill In The Bottom of A 1 Pint Mason Jar.
  • 2. Then Add The Garlic Slices, The Onion Slices and Then Cucumber Sliced On Top Of The Spices.
  • 3. Now Put the 4 Tablespoons of Water, The White Vinegar and The 12 Packets of Splenda Into A Small Pot and Heat to A Boiling Point and Remove from the Stove. Do Not Cool This Liquid, Pour It Directly Over the Top of The Cucumbers in the Jar Filling Almost to the Top, Leave About 1/2 to 3/4 Inch Space. Using A Towel to Hold The Jar (PLEASE BE CAREFUL - IT WILL BE HOT)Put The Inner and Outer Lid On The Jar and Screw Down Tighlty. Turn Jar Back and Forth 3 - 4 Times to Mix the Ingredients and Then Sit It Upside Down On It's Lid and Let Sit Until Jar Is Completely Cool to The Touch.
  • 4. Then Refrigerate for 3 Days Before Opening to Cure. No Tasting Before They Are Done. They Will Be Good!
  • 5. Note: The Longer They Stay In The Refrigerator, The Sweeter They Get.

FANTABULOUSLY EASY YUMMY CRISPY WATERMELON PICKLES



Fantabulously Easy Yummy Crispy Watermelon Pickles image

Don't throw away that watermelon rind! Save it for my pickles! Just have your washed watermelon cut into one inch wide slices and serve only the pulp, cutting the rind into one inch squares (or if you are ambitious, different shapes). Squares are easiest. Make sure you peel the rind and trim it of most of the pink. I like the seedless watermelons because the rind is nicer but any watermelon rind will do. This pickle is done in easy stages over three days. I knew the recipe was fantabulous when one of my friends drove home with a pint jar on the seat of her car, ate all of the pickles and drank the syrup before she got home and then called me begging for more. I hope you try this recipe now that picnic season has arrived and watermelons abound. Canning is not hard, you just have to follow the directions perfectly. It is a fun and rewarding kitchen hobby and you will have so many complements when you give a home-canned item as a gift. Make sure you read through the recipe before you begin. 1 gallon water, filtered, plus more
2 tablespoons pickling salt
2 cups cider vinegar
7 cups white sugar
1 lemon
1 tablespoon whole cloves
4 cinnamon sticks
4 inches candied ginger (or more if you want it spicy)

Steps:

  • ZAAR would not let me enter the watermelon rind no matter how I tried so it is the rind of two ten to twelve pound seedless watermelons. Ugh I am so frustrated!
  • DAY ONE: Wash and carve watermelon and cut rind into one inch squares. Make sure you peel the rind carefully with a veggie peeler because there is nothing nastier than choking on an unpeeled piece of rind. Mix salt into the water in a large non-reactive pot and add the watermelon rind. Cover and let stand 24 hours.
  • DAY TWO: Drain watermelon rind and rinse well. Wash the pot and add the watermelon rind and a gallon of filtered water and lots of ice, at least 4 cups and let stand for two hours. Drain again and pick out the ice. Return the watermelon rind to the pot and cover with boiling water and cook until tender enough to pierce with a wooden skewer, about ten to 12 minutes and then drain well. While the rind is draining wash the pot and prepare the syrup. Put the spices in a spice bag or tea infuser or else you will have to fish all of it out later on. In your rinsed pot, combine the vinegar, sugar, spice bag, juice and rind of the lemon and bring to a boil. Add the rind to the syrup and cook ON LOW until the rind is transparent. This can take a while so keep checking for that transparency. When the rind looks transparent put the lid on the pot and take off the heat. Don't touch it for 24 hours. If you like less spice you can remove the spice bag at this time. I leave it in for the full 24 hours.
  • DAY THREE: Remove the pickles and let them drain back into the pot. Reserve the syrup and bring to a boil. Pack the pickles into (about) 6 sterile pint jars and pour the boiling syrup over the pickles, evenly between the six jars to about 1/4 inch from the top. Cap and adjust bands and process in a hot water bath for 5 minutes from the time the water returns to the boil. Ball Blue Book suggests ten minutes but my old recipe was 5 minutes. I think the 5 minute bath is a crispier pickle and I have to tell you I have never, in the past 35 years, had a jar explode in the pantry, but use the processing time you feel comfy with.
  • DAY SIXTY: Pickles are ready. OK, I start eating them as soon as I hit day three -- So these pickles are made all summer long and enjoyed all year round.

Easy Dill Pickles, As Little As 1 Jar at a Time! image

Good recipe for home gardeners. No more waiting until you have enough cucumbers to do a huge recipe! Follow amounts listed to be added to each jar. This way you can make just one jar or many jars easily.

1 grape leaves
1 garlic clove, sliced
1 teaspoon dill seed
1 head fresh dill or 1 teaspoon dried dill weed
1/2 tablespoon coarse kosher salt (non-iodized)
1/4 cup white vinegar (5% acidity)
hot water

Steps:

  • Wash cucumbers well and cut off blossom end by about 1/4 inch. This is where the enzymes that make pickles too soft mainly is so trimming them will help the pickles stay crispy. If you cant tell which end is the blossom end its the lighter colored end.
  • Prepare the cucumbers as you wish by leaving small ones whole for baby dills, cutting them in half length wise then each half in thirds or fourths length wise to make spears, slicing rounds for hamburger chips or chopping finely for dill relish.
  • Start the jars by putting the leaf in the bottom first then the spices. Next add the prepared cucumbers to the neck of the jars. Add the vinegar then enough HOT water to 1/4" from the top.
  • Wipe the top rim of the jar(s) clean and place a sterilized NEW lid on each jar. Screw the ring band on and tighten.
  • Place in water bath canner or stock pot with hot water in it. Make sure water level is at least one inch over the tallest jar. Bring canner to a boil. Process exactly 10 minutes. Count processing time from the time the water canner STARTS to come to a full rolling boil, not the time the jars are placed in the canner.
  • Remove jars when time has been reached and cool on a towel on the counter. If they seal they are good for one year, if they don't put them in the fridge and use those ones first. They are good right away but are even better when they have been in the brine for a week. ENJOY!

2 c white vinegar
1 c water
1 1/2 tsp salt
2 tsp sugar
5 clove garlic
2 tsp mustard seeds
8 tiny cucumbers for pickling
1 qt canning jar or any jar with tight lid
1 pt canning jar or any jar with tight lid

Steps:

  • 1. In a glass pitcher combine vinegar, water. Set aside.
  • 2. Make sure jars are clean. In quart jar add 1 tsp of salt and a heaping tsp of sugar. In small pint jar add 1/2 tsp of salt and a tsp of sugar. Add seeds to both jars. Add a small amount of liquid. Close jar tight and swish jar to melt sugar and salt mixture.
  • 3. Cut up cukes into chunks, spears, or slices. Put as many pieces as you can in jars. Fill both jars 1/2 way full with liquid and swish around. Take lid off and top off with the rest of the liquid. It's ok if it overflows. You want to make sure they are covered well. Place lid on top again and tighten well. Shake again. Place in refrigerator for 2-3 days. Every time you think to go ck them shake them. Eat and enjoy. Store in fridge for up to 3 weeks.

6 cups thinly sliced cucumbers
2 small onions, sliced
1 medium carrot, thinly sliced ( 1/2 cup)
1 3/4 cups sugar
1 cup white or cider vinegar
2 tablespoons salt
1 tablespoon chopped fresh or 1 teaspoon dried dill weed

Steps:

  • In 2 1/2- or 3-quart glass container, layer cucumbers, onions and carrot. Mix remaining ingredients until sugar is dissolved; pour over vegetables.
  • Cover and refrigerate at least 24 hours but no longer than 2 weeks.
