I love the simplicity of this recipe, and it's oh so good! Best served warm with a scoop of vanilla ice cream. A wonderful Fall treat! Enjoy!

2 c peeled, cored and chopped apples (today i used a honeycrisp)
1 stick butter, melted - i do mine in microwave - 30 second increments
3/4 c sugar
1 egg
1 c flour
1 tsp each - baking powder & cinnamon
1/2 tsp each - salt & ground nutmeg
1/4 tsp ground cloves
1/2 tsp vanilla extract
1/2 c pecans, chopped
1 Tbsp cinnamon sugar mixture - optional

Steps:

  • 1. Preheat oven to 350 degree F. Grease well, a 9 inch pie plate. Set aside.
  • 2. Melt butter in a large bowl ( I use microwave ) Into the melted butter, add egg, vanilla and sugar and whisk well.
  • 3. Sift the flour, spices, baking powder and add to the egg mixture. Batter will be thick. Stir in apples & pecans until well distributed
  • 4. Spread batter evenly into pie plate.Bake for 40 - 45 minutes or until a pick comes out clean. About 10 minutes before cakes is done, I sprinkle with a cinnamon sugar mixture. This is best served warm with a scoop of vanilla ice cream, or whipped cream...Yum!

This cake is easy to make and it turns out so light that you really can't tell you've eaten dessert.....never leaves you feeling stuffed! My favorite cake to make.

Number Of Ingredients 9

1 (18 ounce) box butter pecan cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (6 ounce) box vanilla instant pudding mix
1 cup milk (I use skim, but you can use what you like)
12 ounces Cool Whip (I use fat-free, but you choose)
1 1/2-2 cups of chopped pecans (I toast them for a few minutes-which is optional)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Mix the cake mix as directed on box (do not overbeat).
  • Bake in three layers (approximately 20 minutes) in greased and floured pans.
  • Cool in pans for 10 minutes then remove to rack and cool completely before frosting.
  • Mix the pudding and milk together until it starts to thicken. Fold in the Cool Whip.
  • Add the nuts and vanilla.
  • Frost the cake This makes a lot of icing so be generous between the layers and icing the cake. Store in the refrigerator.

FOR CAKE :
1 package(s) german sweet chocolate
2 1/3 cup(s) cake flour
1 1/2 cup(s) sugar
1 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
2/3 cup(s) butter or margarine
1 cup(s) buttermilk
1 teaspoon(s) vanilla
2 - eggs
FOR COCONUT PECAN FILLING / FROSTING
3/4 cup(s) evaporated milk
1/2 cup(s) brown sugar, firmly packed
1/2 cup(s) granulated sugar
1/2 cup(s) butter or margerine
1 teaspoon(s) vanilla
3 - egg yolks ; slightly beaten
1 1/3 cup(s) coconut, flaked
1 cup(s) chopped pecans

Steps:

  • FOR THE CAKE :
  • Melt chocolate over low heat and cool.
  • Sift flour with sugar,soda,baking powder and salt.
  • Soften butter ; Add flour mixture , 3/4 cup buttermilk and vanilla. Mix to dampen flour ; beat for 2 minutes @ medium speed of electric mixer , scraping bowl occasionally.
  • Add chocolate , eggs and the remaining 1/4 cup of buttermilk ; Beat 1 minute with mixer.
  • Pour into two 9" layer pans , lined on bottom with paper .
  • Bake @ 350° for about 35 minutes , or until cake tested with a toothpick inserted in the center comes out clean.
  • Cool in pans for 15 minutes ; remove from pans and cool on rack....Frost.
  • FOR THE COCONUT - PECAN FILLING AND FROSTING :
  • Combine milk , sugars , butter and vanilla. Bring to a FULL boil , stirring constantly , Remove from heat ( Mixture may appear curdled ).
  • QUICKLY stir small amount of hot mixture into egg yolks ; then stir into hot mixture.
  • Return to boil , stirring constantly ; Remove from heat ; Add coconut and pecans.
  • Cool to spreading consistency , beating occasionally.

2 tablespoons butter, softened
1 cup Bisquick baking mix
2 tablespoons water
3/4 cup water
1/4 cup butter
1 cup Bisquick baking mix
1 teaspoon maple flavoring
3 eggs
1 1/2 cups powdered sugar
2 tablespoons butter, softened
1 teaspoon maple flavoring
1 -2 tablespoon milk
1/4 cup chopped pecans

Steps:

  • Heat oven to 350°F
  • In small bowl, cut 2 tablespoons butter into 1 cup Bisquick mix, using pastry blender until crumbly. Sprinkle with 2 tablespoons water; mix until pastry cleans side of bowl. On ungreased cookie sheet, pat pastry into 11-inch circle. Set aside.
  • In 3-quart saucepan, heat 3/4 cup water and 1/4 cup butter to rolling boil. Add 1 teaspoon maple flavor and 1 cup Bisquick mix all at once. Stir vigorously over low heat about 1 1/2 minutes or until mixture forms a ball; remove from heat.
  • Beat in eggs, one at a time; continue beating until very smooth. Spread mixture evenly over the crust.
  • Bake 45 to 50 minutes or until topping is crisp and dark golden brown; cool slightly.
  • In small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Drizzle over cofee cake. Sprinkle with pecans.

Recipe is made with box cake mix. I actually made this up. It was suppose to be a different recipe.My fluke turned out to be the best Pumpkin cake I ever had. Very easy for holidays or any day. I added a streusel topping. I love it. It is a very moist delicious cake.

  • 2. Streusel topping: Mix butter,brown sugar,flour and cinnamon,and 1/2 cup pecans together until crumbly.set aside.
  • 3. mix pumpkin,evaporated milk,3 eggs,sugar,salt,and pumpkin pie spice together. Add cake mix and 1/2 cup of pecans mix well with whisk.Put in oven and bake 30 minutes. Open oven and sprinkle Streusel topping on,and bake another 20 minutes-30 minutes,or until pick comes out clean. Cool cut and top with cream or cool whip.

1 pkg butter pecan cake mix
16 oz container coconut pecan frosting
4 eggs
3/4 c vegetable oil
1 c water
1 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9 or 10 inch Bundt pan with non-stick cooking spray. Combine the cake mix with the frosting, eggs, oil, water and 1/2 of the pecan pieces. Mix until combined.
  • 2. Sprinkle the remaining 1/2 of pecans in the prepared Bundt pan then pour in the cake batter. Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick comes out clean.

1 pkg yellow cake mix
1/2 c melted butter
4 large eggs
1-1/2 c light corn syrup
1/2 c packed dark brown sugar
1 tsp vanilla
2 c toasted, chopped pecans

Steps:

  • 1. Heat oven to 325. Lightly spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, beat cake mix, butter and 1 egg on low until combined.
  • 2. Spoon out 2/3 cup batter and set aside. Spread remaining batter in pan, bake for 15 mins, or until light brown. Cool 10 mins.
  • 3. In lg bowl, combine reserved batter, corn syrup, brown sugar, 3 eggs and vanilla. Beat until well combined. Fold in pecans. Pour pecan mix over baked cake. Bake about 45 min, or until a toothpick inserted in center comes out clean. Cool 20 mins. Slice.

1/4 c brown sugar
3/4 c chopped pecans
1 stick butter
cinnamon (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Spread apple pie filling in the bottom of a 9x13 pan. Sprinkle dry cake mix over the apples. Sprinkle with sugar and pecans.
  • 2. Melt butter and drizzle over top of cake. Sprinkle with cinnamon if desired.
  • 3. Bake 45-50 minutes at 350 degrees.
