2 tablespoons butter
1 cup white sugar
½ teaspoon salt
1 cup shelled peanuts

Steps:

  • Line a jelly roll pan with parchment paper.
  • Melt butter in a saucepan over medium heat. Stir sugar and salt with melted butter to dissolve completely. Remove saucepan from heat, add peanuts, and stir to coat completely; immediately pour onto prepared pan and spread into an even layer.
  • Refrigerate until brittle, at least 30 minutes. Separate from parchment and break into pieces.

cooking spray
1 cup white sugar
½ cup light corn syrup
1 ½ cups peanuts, or more to taste
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Spray a baking sheet and a wooden spoon with cooking spray.
  • Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
  • Heat sugar mixture in microwave on high for 5 minutes.
  • Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
  • Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!

2 cups sugar
1 cup white light corn syrup
1/2 cup water
1 teaspoon butter
1 teaspoon vanilla
2 teaspoons baking soda
1 -1 1/2 cup raw Spanish peanut

Steps:

  • Stir syrup, water and sugar together in large, heavy pan to hard ball stage (250*F- 265*F-- A little of this syrup dropped into cold water will form a hard ball).
  • Stir in butter and peanuts until golden brown.
  • Stir in vanilla and soda.
  • Pour into 2 buttered pizza pans, just shaking pan to even out mixture.
  • Cool and break into pieces.

  • In a 4 cup Pyrex glass measuring cup mix the sugar Karo syrup and water-cook for 9 minutes.
  • When done use pot holder and stir in peanuts(or you favorite kind).
  • Stir in butter.
  • Immediately pour onto greased cookie sheet( I use spray oil), spread quickly it gets thick fast.

I have been making this since microwaves first came out, it's so easy and really a no-fail recipe, you may use other kinds of nuts if desired --- *warning* this is very habit-forming :)

1 cup sugar
1/2 cup corn syrup
1 1/2 cups dry roasted salted peanuts (use dry roasted peanuts only!)
1 tablespoon butter
1 1/2 teaspoons vanilla
1/2 teaspoon maple extract or 2 teaspoons vanilla
1 teaspoon baking soda

Steps:

  • Combine sugar and corn syrup in a 3-qt heat-resistant plastic microsafe bowl.
  • Microwave on high for 5 minutes.
  • Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
  • Add butter, vanilla and baking soda.
  • Mix until light and foamy (be careful, syrup is HOT!).
  • Pour quickly onto a buttered cookie sheet, and spread to desired thickness.
  • When cool, break into pieces.

I'll bet I made this 30 times last year during the Holidays, It is the best Peanut Brittle I have ever tasted!! and so easy, great to give as a kitchen gift. I get all of my ingredients together before I start so that it doesn't have a chance to cool before I mix in the baking soda.

1 1/2 c peanuts, salted and without skins
1 c white sugar
1/2 c light corn syrup
1 pinch of salt
1 Tbsp butter
1 tsp vanilla
1 tsp baking soda

Steps:

  • 1. grease Teflon cookie sheet with butter.
  • 2. In glass microwavable bowl combine peanuts. sugar.corn syrup and salt
  • 3. microwave on hi for 6-7 minutes, I microwave for 3 then give it a quick stir and then microwave for another 3 minutes
  • 4. stir in butter and vanilla, and return to microwave for another 2 minutes,
  • 5. Remove from micro wave and quickly stir in baking soda, mixture will look slightly foamy. Pour on to prepared cookie sheet and spread quickly with the back of the spoon. cool and break into pieces.

8 tablespoons unsalted butter (1 stick)
1/2 cup water, plus
2 tablespoons water
1/3 cup light corn syrup
1/2 teaspoon baking soda
1 1/2 teaspoons salt
12 ounces whole dry-roasted salted peanuts

Steps:

  • Spray (nonstick spray) or butter a 12x16x1/2-inch pan lightly.
  • Combine the sugar, butter, water, and corn syrup in a large saucepan and stir until all the sugar is wet.
  • Cook over high heat, stirring, until the mixture turns medium golden (300°F).
  • Immediately remove from the heat and carefully whisk in the baking soda followed by the salt (take care; the mixture will rise in the pan and bubble).
  • Fold in the peanuts.
  • Quickly pour the mixture onto the prepared sheet pan and spread it out using the back of the spoon before it starts to harden. (It may not cover the whole pan).
  • Once the brittle is completely cool, break it into bite-size pieces with the back of a knife or other blunt instrument.

  • 1. Mix sugar and corn syrup together and microwave on high for 4 minutes (it's an older recipe and my microwave in 1200W so it only took 2 1/2 mins to get it bubbly) Mix in peanuts Microwave on high for 3 mins (or 1 1/2 mins for me) Add butter and vanilla, microwave on high for 1 min (or for me 30 seconds) Add baking soda, mixture will froth. Quickly pour onto a greased cookie sheet (I found that if you tipped the cookie sheet around the brittle spread out more. Let cool. Break up and Enjoy!

2 c raw peanuts (shelled or not it's up to you)
1/4 c water
1 1/2 tsp baking soda

  • 1. Combine all ingredients EXCEPT the baking soda in a heavy skillet & cook until the peanuts start to pop & mixture begins to brown. Stir often so all the peanuts cook evenly. On my stove it will cook about 20 minutes on 6 1/2 from the time I turn it on.
  • 2. The peanuts pop open about the time the syrup turns a carmel color. Then take off the heat & add the baking soda. Stir quickly & mix well. Pour & spread out evenly on a greased cookie sheet.
