This has amazed our guests for years, but is so easy it leaves me time to enjoy their company! And sometimes hubby and I just have it together with a very oaky Chardonnay. The use of unsalted butter is imperative for this recipe, else it is way too salty! This serves 4 for a pretty filling appetizer or 2 for a meal with a salad. You can use clams instead of mussels if you wish. There will be plenty of broth to soak up with a nice crusty bread.

1 cup unsalted butter
12 garlic cloves, minced
1 teaspoon fresh ground black pepper
2 tablespoons minced shallots (or sweet onion)
1/2 teaspoon dried tarragon or 1 1/2 teaspoons fresh tarragon
1/2 teaspoon dried thyme or 1 1/2 teaspoons fresh thyme
1/2 cup chopped fresh parsley
1/2 cup chopped fresh chives
1 (12 ounce) bottle northwest amber ale
2 lbs fresh mussels (debearded)

Steps:

  • In a large non-reactive pot with lid, melt butter.
  • Add garlic, pepper, shallots, tarragon, thyme, parsley, chives and beer.
  • Heat just to a simmer and stir in mussels or clams.
  • Cover and steam 4-7 minutes till shells have opened.
  • Discard any that have not opened.
  • Put clams in individual bowls and ladle broth over.
  • Serve with crusty bread for sopping.

Easy Pacific Northwest Steamers image

This is a quick and easy recipe for preparing a great-tasting batch of steamers. Other herbs can be added to taste. Also, while I haven't tried it yet, next time I will substitute the sherry/water with 1 cup of beer. Do whatever sounds best to you!

1 lb live steamer clam
2 tablespoons olive oil
5 -6 chopped garlic cloves
1/2 teaspoon dried dill weed
1/4 teaspoon dried thyme
1/2 cup cooking sherry
1/2 cup water
1/4 cup butter
1 fresh baked baguette or 1 round sourdough loaf

Steps:

  • Rinse and drain clams; set aside.
  • Heat olive oil in large heavy pot over medium heat.
  • Add garlic, dill, and thyme and heat until garlic is just starting to brown (about 2 min).
  • Add sherry and water and heat until steaming (about 1 min).
  • Add clams, cover pot and cook 5 minutes.
  • Add butter and stir gently until well blended with juices.
  • Ladle out clams into a large serving bowl.
  • Remove any clams that did not open all the way.
  • Pour remaining juices over clams.
  • Serve hot with fresh bread on the side.
  • I served this with a lighter beer and fruity white wine in keeping with flavors of the Pacific Northwest.
  • Don't forget another bowl to throw the shells in!

I invented this at church one day when I tried to put a twist on hot chocolate. It turned out to be a steamer! Super easy and super yummy

Number Of Ingredients 4

1 teaspoon vanilla flavoring (not extract)
2 cups of heated milk
1/2 cup French vanilla flavored coffee creamer (coffee mate works best)
whipped cream

Steps:

  • heat the two cups of milk until it is as hot as coffee shop bought hot chocolate. Probably about 1:30 seconds depending on what kind of microwave you have. Note:do not curdle the milk.
  • Put vanilla flavoring and vanilla creme in a cup and stir.
  • Add milk to cup and stir.
  • Put on whipped creme.
  • If desired, shave some chocolate on top of the whipped creme.
  • If you have some other kind of flavoring that you like, you can mix and match the flavoring and the creme.
  • If you don't have milk, you can make hot chocolate with water, and that works the same.
