EASY NOODLE KUGEL
This is a yummy version of noodle kugel (noodle pudding) that has been in our family for years. So easy to make and so tasty!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
- Melt butter in the pot, and stir together the drained noodles, cottage cheese, salt, and applesauce. Mix in the sugar and cinnamon. Add the beaten eggs; stir to blend all ingredients. Pour mixture into prepared baking dish.
- Bake until top is very brown, about 1 hour.

Steps:
- 1. Preheat oven to 350 degrees F. Lightly grease 9" x 13" pan with cooking spray.
- 2. Cook noodles so they are al dente. Drain well.
- 3. Beat eggs, vanilla, cinnamon and salt together well. Stir in sugar, melted butter and applesauce. Add noodles and cottage cheese. Pour mixture into prepared pan.
- 4. Bake until top is brown and mixtures is set, about 1 hour.
EASY NO-COOK NOODLE DAIRY KUGEL
Since there is no pre-cooking the noodles first, this takes minutes to make, it's light fluffy and melt-in-your-mouth delicious, serve warm, cold or at room temperature, you may need to adjust the sugar amount to desired taste.

Steps:
- Butter a 13 x 9-inch baking pan.
- Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
- In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).
- Whisk in the milk until combined (at this point you may add in more sugar if desired).
- Pour the mixture over the dry noodles and mix very lightly (your pan will be very full).
- Allow to sit out for 5-7 minutes.
- Set oven to 350 degrees F.
- Bake for about 50-60 minutes or until the kugel is just set in the middle.
- Serve warm, cold or at room temperature.

I got this from a Bon Appetit magazine a long time ago....it really is very easy to make, as you don't have to boil the noodles first, everything is cooked in one casserole, it turns out fantastic, and is soooo yummy!

- Set oven to 350 degrees.
- Butter a 13 x 9-in baking dish.
- Spread UNCOOKED noodles over bottom of buttered dish, sprinkle with raisins.
- Whisk eggs, sour cream, butter and sugar in a large bowl until smooth.
- Whisk in milk, and pour over noodles.
- Let kugel stand for 5 mins.
- Meanwhile, mix cornflakes and brown sugar in a bowl; sprinkle evenly over kugel.
