Fried tortillas topped with salsa and cheese are baked for 8 minutes at 350 degrees. Cheddar, Jack, or pizza mixture all work fine. Cool the oil and save it in a jar in the fridge for the next time.

2 cups vegetable oil
4 large flour tortillas
1 cup salsa
1 cup shredded Cheddar cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a large skillet over medium-high heat until hot; fry tortillas, one at a time, until golden brown, 2 to 3 minutes per side. Transfer fried tortillas using tongs to a baking sheet.
  • Spread salsa onto each fried tortilla; top with Cheddar cheese and Parmesan cheese.
  • Bake in the preheated oven until cheese is melted, about 8 minutes.

These Mexican pizzas are made with Old El Paso™ tortillas, black bean refried beans, salsa, cheese and lots of fresh ingredients.

10 (6-inch) Old El Paso™ flour tortillas
1 (16-ounce) can black bean refried beans
1 teaspoon taco seasoning
1/2 teaspoon kosher salt
1 cup salsa, more if needed
2 cups shredded cheese
1 1/2 cup cooked meat (I used shredded rotisserie chicken)
Optional toppings: tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro

Steps:

  • Pre-heat the oven to 400°F. Line a baking sheet with foil or use a pizza pan. Place the tortillas on the pan and warm them in the oven for 3 minutes.
  • While the tortillas are cooking, heat the beans in a small sauce pan over medium-low heat for 2 to 3 minutes. Stir in 3 Tablespoons of salsa, taco seasoning and salt. Add more salt and pepper to taste.
  • Remove tortillas from the oven and spread the beans onto the top side of 5 tortillas. Sprinkle with cheese, add meat if desired and then top with another tortilla. Spread salsa on top of the tortilla and then add cheese. Bake for 5 to 7 minutes, or until the cheese is melted and bubbly.
  • Top with fresh ingredients such as tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro and then cut into 4 slices.

1 cup canned Old El Paso® refried beans
½ cup Old El Paso® red enchilada sauce
1 ½ cups shredded Mexican blend cheese
3 medium green onions, chopped
1 cup sour cream
1 cup Old El Paso® Thick 'n Chunky Salsa

Steps:

  • Heat oven to 425 degrees F. Grease or spray 15x10x1-inch pan.
  • Unroll pizza dough in pan. Using an offset spatula, spread beans over crust, leaving 1-inch border around edges. Spread with enchilada sauce; sprinkle with cheese.
  • Bake about 15 minutes or until cheese is bubbly and melted. Sprinkle with green onions. Serve with sour cream and salsa.

1 pkg flour tortillas
1 large jar of salsa
1 pkg shredded chedar cheese
2 lb ground beef
1 tsp onion powder
container sour cream
oil for frying
lettuce
tomatoes

Steps:

  • 1. In a skillet cook beef with oniion powder till no longer pink. Drain and set aside.
  • 2. Fry tortillas on each side in hot oil till golden brown * you might have to poke holes in them while cooking to pop bubbles. drain on paper towels.
  • 3. Spread salsa on tortillas followed by beef and cheese. heat in microwave till cheese melts. top with dolup of sour cream lettuce and diced tomatoes. (I serve with my homemade refried beans)

This is a recipe I got from my boyfriends dad. He found in some magazine ages ago. It's so easy to make and so delicious!

2 garlic cloves, minced finely
1 lb ground beef (pref. gorund sirloin)
1 (14 ounce) can diced tomatoes, drained
1 (14 ounce) can dark red kidney beans, drained
1 (8 ounce) packet taco seasoning, any brand
8 large tortillas
2 cups of shredded Mexican blend cheese
sliced black olives (to garnish) (optional)
chopped cilantro (to garnish) (optional)
olive oil
salt & pepper, for taste

Steps:

  • Coat bottom of large skillet lightly with olive oil.
  • Saute garlic on medium heat until light brown.
  • Saute meat, adding taco seasoning once meat is broken up and cooking.
  • Once meat is cooked, ad drained beans and tomatoes. Cook mixture till vegetables are cooked through.
  • Arrange tortillas on a round, pizza style baking sheet, overlapping each tortilla until the whole sheet is covered. Bake on 350 degrees for 5 minutes.
  • Remove from oven, top with chili meat and then cover with cheese (and olives if desired) and return to a 350 degree oven for 5-10 minutes, or until the cheese is melted.
  • Remove from oven, and let stand for 5 minutes so the cheese doesn't fall apart when cut.
