2 tablespoons (1 ounce) unsalted butter
4 tablespoons sugar
4 ounces bittersweet chocolate, cut into small pieces
4 eggs, separated
2 tablespoons orange liqueur
3 egg whites
1/2 lemon, juiced
Powdered sugar, for garnish
Unsweetened whipped cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter and dust with about 2 tablespoons of the sugar, 6 (1-cup) souffle dishes. Chill until needed.
  • Melt the chocolate in a metal bowl set over a double boiler. Remove from the heat and stir in the egg yolks and the liqueur.
  • Whip all 7 egg whites until they form soft peaks. Whip in the lemon juice and the remaining 2 tablespoons sugar. Continue to whip the whites until they are stiff but still very shiny. Stir a quarter of them into the chocolate mixture, and then gently fold in the remaining whites.
  • Fill the molds with the souffle mixture. Run your thumb around the inside edge of each dish so that the souffles will form a hat. Bake for 8 to 10 minutes, or until the edges are set but the middle is still just a little soft.
  • Serve on napkin-lined dessert plates. Dust the tops with powdered sugar, if desired, and spoon a dollop of whipped cream into the center of each souffle. Serve immediately.

1 teaspoon melted butter, or as needed
2 tablespoons white sugar
2 ounces 70% dark chocolate, broken into pieces
1 tablespoon butter
1 tablespoon all-purpose flour
4 ⅓ tablespoons cold milk
1 pinch salt
1 pinch cayenne pepper
1 large egg yolk
2 large egg whites
1 pinch cream of tartar
1 tablespoon white sugar, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Brush bottom and sides of 2 (5-ounce) ramekins lightly with 1 teaspoon melted butter; cover bottom and sides right up to the rim. Add 1 tablespoon white sugar to ramekins. Rotate ramekins until sugar coats all surfaces. Pour off extra sugar.
  • Place chocolate pieces in a metal mixing bowl. Place bowl over a pan of about 3 cups hot water over low heat. Do not let water boil or come to a simmer.
  • Melt 1 tablespoon butter in a skillet over medium heat. Sprinkle in flour. Whisk until flour is incorporated into butter and mixture thickens, about 1 minute. Reduce heat to low. Whisk in cold milk until mixture becomes smooth and thickens, 2 or 3 minutes. Remove skillet from heat. Transfer mixture to bowl with melted chocolate. Add salt and very small pinch of cayenne pepper. Mix together thoroughly. Add egg yolk and mix to combine. Leave bowl above the hot (not simmering) water to keep chocolate warm while you whip the egg whites.
  • Place 2 egg whites in a mixing bowl; add cream of tartar. Whisk until mixture begins to thicken and a drizzle from the whisk stays on the surface about 1 second before disappearing into the mix, 2 or 3 minutes. Add 1/3 of sugar and whisk in. Whisk in a bit more sugar about 15 seconds; whisk in the rest of the sugar. Continue whisking until mixture is about as thick as shaving cream and holds soft peaks, 3 to 5 minutes.
  • Transfer a little less than half of egg whites to chocolate. Mix until egg whites are thoroughly incorporated into the chocolate, 1 or 2 minutes. Add the rest of the egg whites; gently fold into the chocolate with a spatula, lifting from the bottom and folding over. Stop mixing after the egg white disappears. Divide mixture between 2 prepared ramekins. Place ramekins on prepared baking sheet.
  • Bake in preheated oven until scuffles are puffed and have risen above the top of the rims, 12 to 15 minutes.

As we well know, chocolate has been around for a very long time, dating all the way back to pre-Columbian Mexico. Once considered a gift from the gods by the Mayans, and after being introduced to Europe, reserved for Spanish royalty, chocolate has become a worldwide favorite when preparing desserts. You'll find it in cakes, tarts, dessert sauces, and soufflés, as you see here. Mexican chocolate, available in Latin markets and some supermarkets, is flavored with cinnamon, almonds, and vanilla. It makes for an unmistakable-and irresistible-soufflé.

1 tablespoon unsalted butter, melted
Four 3.1-ounce disks Ibarra chocolate (see page 117), coarsely chopped
6 tablespoons (3/4 stick) unsalted butter
6 large egg yolks
6 large egg whites
1/4 cup sugar

Steps:

  • Preheat the oven to 400°F. Brush eight 1/2-cup ramekins or custard cups with the melted butter.
  • Set a large metal bowl over a saucepan of simmering water, add the chocolate and the 6 tablespoons butter to the bowl, and stir until the mixture is melted and smooth (the mixture will be a little grainy). Remove the bowl from the heat and let the mixture cool slightly. Then whisk in the egg yolks.
  • Using an electric mixer, whip the egg whites in a medium bowl until foamy. Add the sugar and beat until stiff peaks form. Fold the whites into the chocolate mixture in three additions. Divide the chocolate batter among the prepared ramekins.
  • Bake the soufflés for 16 to 18 minutes, or until they are puffed but the centers still jiggle slightly. Serve immediately.

8 ounces semisweet chocolate, chopped
1/2 cup (1 stick) unsalted butter, cut into 1-inch pieces
1 1/2 teaspoons instant espresso powder
Pinch of salt
6 large egg yolks
1/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 large egg whites
1/2 cup chilled whipping cream
1 cup fresh raspberries
Mint sprigs (optional)

Steps:

  • Butter six 4 1/2-inch-diameter tartlet pans with 3/4-inch-high sides and removable bottoms. Place tartlet pans on baking sheet. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Add espresso powder and salt; stir to blend well. Cool to lukewarm, stirring occasionally.
  • Using electric mixer, beat egg yolks, all but 1 tablespoon sugar, vanilla and cinnamon in large bowl until mixture is pale yellow and thick, about 5 minutes. Fold 1/4 of egg mixture into chocolate mixture. Fold chocolate mixture into remaining egg mixture.
  • Beat egg whites in another large bowl until soft peaks form. Add 1 tablespoon sugar; beat just until firm peaks form. Fold into chocolate mixture. Divide batter among prepared pans. Cover; chill at least 1 hour and up to 4 hours.
  • Beat cream in large bowl until soft peaks form. (Whipped cream can be made 4 hours ahead. Cover and refrigerate.)
  • Position rack in center of oven and preheat to 400°F. Bake cakes until edges are set and centers are still soft, about 11 minutes. Cool on racks 2 minutes. Run knife around pan sides to loosen cakes. Remove pan sides. Transfer cakes to plates.
  • Top each cake with dollop of whipped cream. Garnish with raspberries and mint, if desired. Serve cakes warm.

  • Preheat oven to 350°F. Butter and sugar eight 3/4-cup soufflé dishes or custard cups. Melt Mexican chocolate and butter in heavy medium saucepan over low heat, stirring constantly until melted (mixture will be grainy). Whisk egg yolks in large bowl to blend. Gradually whisk in hot chocolate mixture. Using electric mixer, beat egg whites in another large bowl until stiff but not dry. Fold 1/4 of egg whites into warm chocolate mixture to lighten. Fold in remaining egg whites. Divide soufflé mixture among prepared soufflé dishes.
  • Place dishes on rimmed baking sheet. Bake until tops have risen about 1/2 inch above rim of dish and appear dry and centers are softly set, about 18 minutes. Serve soufflés with sweetened whipped cream.
