MANDARIN ALMOND SALAD
Another Mandarin Almond Salad. Only slightly different from the one Inez posted. Can't go wrong with either one. This is good stuff!

Steps:
- In a large bowl, combine the Romaine, drained oranges, and chopped onions.
- Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
- Turn onto plate and cool for 10 minutes.
- Combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
- Pour salad dressing over lettuce mixture; toss.
- Sprinkle with sugared almonds.

- In a small skillet, melt 3 tablespoons sugar over low heat. Add almonds; stir until coated. Cool; break into small pieces and set aside. In a jar with a tight-fitting lid, combine oil, vinegar, parsley, salt, pepper, hot pepper sauce and remaining sugar; shake well. , Just before serving, combine lettuce, oranges, onion and almonds in a large salad bowl. Shake dressing; pour over salad and toss.

- Shake first 6 dressing ingredients in a jar and refrigerate.
- Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
- Scrape into metal bowl and cool to room temperature.
- Break up and store covered at room temperature.
- Just before serving, put chopped lettuces in a large bowl.
- Add celery, oranges, onions and almonds.
- Shake dressing well and pour over salad.
- Toss to mix and coat.

- In a jar with a tight fitting lid, combine the oil, vinegar, sugar, parsley, salt and pepper. Cover and shake well. Refrigerate until use.

- Shaking constantly, toast almonds in skillet over low heat until golden brown (about 5 minutes).
- Wash and dry lettuce.
- Tear into bite size pieces.
- Place with green onions and mandarin oranges in large salad bowl.
- Dressing: Combine all ingredients but egg and vinegar.
- Add in thin stream and process till well blended.
- Serves 6.
- MAKES: 1 cup dressing.

EASY MANDARIN ALMOND SALAD
Of all the salads listed by the same name, none are as simple as the recipe I always use. (Remember, I'm a lazy cook!!)

- For dressing: mix oil, vinegar and sugar in a small bowl. Set aside.
- Tear lettuce into serving bowl. Add mandarin slices and almonds.
- Mix in dressing, adding only as much as desired.
- Serve. Garnish with green onion if desired.
- *Note: You can toast almonds in a frying pan until brown, stirring regularly -- especially when they start getting dark. I also usually add a generous sprinkling of sugar to candy the almonds. The almonds will be soft when you take them off the element, but once they cool, they'll become crispy. You'll also have fun cleaning the pan!
