Easy, cheesy, and totally decadent baked spinach!

Number Of Ingredients 8

20 ounces frozen spinach, thawed and squeezed dry
4 ounces cream cheese, cut into small cubes
1 1/2 cups shredded monterey jack cheese
6 slices bacon, fried and crumbled
4 large eggs, beaten
1/4 cup butter, melted
2 cloves garlic, minced
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Add all of the ingredients to a large mixing bowl and stir well to combine.
  • Spread mixture into a 8x8 baking dish and bake for 35-40 minutes or until the edges are golden and the center is set.
  • Serve immediately.

From the cookbook "Diabetic FOUR Ingredient Cookbook." I love spinach and can't wait to try this recipe. I have printed it here just like it is in the cookbook, but I would probably use low fat cheddar cheese instead of fat free, because it performs better. That should only add about 3 grams fat per serving.

1 carton (16 oz) fat free cottage cheese
8 oz fat free cheddar cheese, grated
1 pkg (10 oz) chopped spinach (thawed and drained)
3/4 c egg substitute

Steps:

  • 1. Combine all ingredients and mix well.
  • 2. Spoon into a 1-1/2 to 2 quart casserole dish sprayed with nonstick spray. Bake 45 minutes at 350°F.
  • 3. Per 1-cup serving: calories = 127 fat, sat fat = 0g cholesterol = 10mg sodium = 633mg protein = 25g carbohydrate = 7g fiber = 1g Diabetic exchanges: 1/2 vegetables, 3-1/2 very lean meats

Number Of Ingredients 7

2 pounds fresh baby spinach
5 tablespoons butter
3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon Italian seasoning
3/4 teaspoon salt
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. In a stockpot, bring 5 cups water to a boil. Add spinach; cook, covered, 1 minute or just until wilted. Drain well., In a small skillet, heat butter and oil over medium-low heat. Add garlic, Italian seasoning and salt; cook and stir until garlic is tender, 1-2 minutes., Spread spinach in a greased 1-1/2-qt. or 8-in. square baking dish. Drizzle with butter mixture; sprinkle with cheese. Bake, uncovered, until cheese is lightly browned, 10-15 minutes.
