Sweet Potato Pie image

Number Of Ingredients 10

1/2 cup (one stick) unsalted butter, softened
1 cup sugar
2 large eggs, lightly beaten
1 tablespoon vanilla extract
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
4 medium to large sweet potatoes (about 1 1/2 pounds), peeled, boiled and mashed to make about 2 1/2 cups
1/2 cup sweetened condensed milk
1 10-inch baked pie shell

Steps:

  • Preheat oven to 300 degrees.
  • In a large bowl cream the butter and sugar together. Mix in the eggs, vanilla, nutmeg, cinnamon and salt. Add the mashed sweet potatoes and condensed milk and mix well.
  • Lightly prick the pie shell, pour in the filling and bake about 1 hour, until a knife inserted in the center comes out clean.
