No one would ever guess this lemon-blueberry cake starts out with a boxed mix. Adding blueberries, lemon, and milk to the mix will result in a moist, light, and fluffy cake.

cooking spray
1 (15.25 ounce) package lemon cake mix, divided
¾ cup milk
½ (8 ounce) package Neufchatel cheese, softened
¼ cup freshly squeezed lemon juice
2 eggs, at room temperature
1 tablespoon lemon zest
1 cup blueberries, fresh or frozen
1 ½ cups powdered sugar
3 tablespoons lemon juice, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
  • Place all but 1 tablespoon cake mix in a large bowl. Add milk, Neufchatel cheese, eggs, and lemon zest and beat with an electric mixer for 3 minutes.
  • Place blueberries in a separate bowl and toss with remaining 1 tablespoon cake mix until coated. Fold into cake batter and transfer to the prepared Bundt® pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Set on a wire rack until completely cooled, about 30 minutes.
  • Combine powdered sugar and lemon juice for glaze in a small bowl. Mix together until desired consistency, adding more lemon juice a bit at a time, if needed.
  • Run a table knife around the edges of pan to loosen cake. Invert carefully onto a serving plate and slowly pour glaze over top.

1 (18.25 ounce) package lemon cake mix
1 cup sour cream
½ cup vegetable oil
½ cup freshly squeezed lemon juice
4 large eggs
1 (3 ounce) package instant lemon pudding mix
zest of 1 lemon, or more to taste
1 tablespoon poppy seeds, or more to taste
½ teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube cake pan.
  • Beat cake mix, sour cream, vegetable oil, lemon juice, eggs, pudding mix, zest, poppy seeds, and lemon extract in a bowl with an electric mixer on low speed for 1 minute. Increase speed to medium and beat for 3 minutes. Pour batter into prepared pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

CAKE:
1 box (18 1/4 oz.) yellow cake mix with the pudding
1 box (3 oz.) instant lemon pudding mix
1/2 c vegetable oil
1/4 c sour cream
finely grated zest of 1 lemon
4 extra large eggs
1 c warm water
1/4-1/2 c poppy seeds (to taste)
LEMON GLAZE (INSIDE):
juice of 2 lemons
1 1/2 c powdered sugar
LEMON FROSTING GLAZE (OUTSIDE):
1 can(s) Lemon Frosting
*can also garnish with zest from other lemon

Steps:

  • 1. Cake: Preheat oven to 350 degrees. Grease a bundt pan. Beat together cake ingredients with an electric mixer for about 4 minutes. Pour batter into prepared bundt pan. Bake for 45 minutes or until toothpick tests clean.
  • 2. Lemon Glaze (inside): While cake is baking, mix the lemon juice with the powdered sugar for the glaze. It should have a thin consistency to sink into the cake. When cake is done and still hot, poke holes all over it (still in the bundt pan) with long skewers and pour the glaze over it letting it all seep in. Allow cake to cool and then remove from the pan inverting onto serving plate.
  • 3. Lemon Frosting Glaze (outside): Spoon frosting from can into microwave-safe bowl. Nuke, stiring often, til thin enough to pour over top of cake. *You can also garnish top with zest from second lemon. I LOVE it but my hubby does not.

1 box yellow cake mix
3 eggs
1 (21 ounce) can lemon pie filling
1/4 cup water
1/4 cup vegetable oil
1/2 can duncan hines creamy home-style classic vanilla frosting (or flavor of your choice)

Steps:

  • Pour yellow cake mix into large mixing bowl.
  • Add 3 eggs, 1 can Lemon Pie Filling, 1/4 cup water, and 1/4 cup vegetable oil.
  • Mix with mixer for 2 minutes on medium-high speed.
  • Pour into a greased bundt cake pan.
  • Bake for 40-50 minutes at 350 degrees Fahrenheit.
  • Cool cake for 10 minutes, then remove from pan onto cake plate.
  • Microwave 1/3 to 1/2 can of frosting until consistency of glaze.
  • Drizzle frosting onto top of cake, letting it drip down sides.

1 c lemon-lime soda (7up)

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour a 10 inch bundt pan.
  • 2. In a large mixing bowl, combine cake mix and pudding mix. Stir in oil. Beat in the eggs, one at a time until they are well blended. Then fold in in 7Up carefully and only until it is fully mixed.
  • 3. Add batter into prepared pan. Bake in preheated oven for 35-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

GLAZE

  • Combine cake mix, eggs. yogurt, oil and lemon peel in medium bowl; beat according to package directions. Spoon half of batter evenly into greased and floured 10 inch Bundt pan. Sprinkle berries evenly over batter. Pour remaining batter evenly over berries.
  • Bake at 325 degrees for 53 to 55 minutes. Cool 20 minutes in pan on wire rack. Remove cake from pan and cool completely on wire rack.
  • GLAZE: Blend powdered sugar, butter, lemon juice and vanilla in medium bowl until smooth. Spoon evenly over warm cake, allowing glaze to drizzle down sides.
