Sweet and gooey, this homemade caramel popcorn recipe is an old family favorite.

1 pound brown sugar
1 14 ounce can sweetened condensed milk
1 cup karo syrup (light corn syrup)
1/2 cup butter
1 cup unpopped popcorn

Steps:

  • Pop your popcorn in an air popper machine. My machine only allows 1/2 cup of kernels at a time so I had two separate batches that I had to pop.
  • Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium high heat and bring to a boil.
  • Add the sweetened condensed milk. Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water). It will burn if you cook it too long, so make sure you are stirring continuously and watch it closely.
  • When it is finished cooking, take your pan off the stove and pour the caramel sauce over your air popped popcorn. Mix until all the popcorn is completely coated. You will need a very large bowl to mix it all together.

Mazola Pure® Cooking Spray
4 quarts popped popcorn
1 cup brown sugar
½ cup Karo® Light OR Dark Corn Syrup
½ cup butter OR margarine
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon Spice Islands® Pure Vanilla Extract

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.

1 1/4 c popcorn kernels
1 c butter
2 c brown sugar, firmly packed
1/2 c light Karo syrup
1 tsp salt
1 tsp baking soda

Steps:

  • 1. Preheat oven to 200 degrees.
  • 2. Air-pop popcorn and place in very large heat proof bowl.
  • 3. In large saucepan melt butter, brown sugar, Karo syrup, and salt and bring to boil.
  • 4. Allow to boil 3 minutes, stirring constantly.
  • 5. Remove from heat, baking soda.
  • 6. Stir till light and fluffy.
  • 7. Pour over popcorn and fold till popcorn is evenly coated.
  • 8. Pour onto 2 lined and sprayed cookie sheets. Bake 30 minutes, remove from oven and toss gently again to re-coat popcorn and bake another 30 minutes
  • 9. Let cool and store in airtight container.
