⅓ cup honey
¼ cup dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon pepper
4 boneless, skinless chicken thighs
¼ cup bacon, chopped
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, sliced
1 avocado, pitted and sliced

Steps:

  • In a small bowl or liquid measuring cup, mix the honey, mustard, oil, garlic, salt, and pepper.
  • Place the chicken thighs in a dish and pour the marinade over the chicken, reserving half for later.
  • Flip the chicken thighs over, fully covering them in the marinade.
  • Cover the dish with plastic wrap and refrigerate for 30 minutes to an hour.
  • Heat a large skillet over medium heat, and place the chicken thighs in the pan.
  • Cook for five minutes on each side, or until the chicken is cooked through.
  • Remove the chicken and set aside.
  • Wipe the pan clean and place back on the heat.
  • Add the chopped bacon to the pan and cook until crispy, about ten minutes.
  • Transfer the bacon to a paper towel-lined plate to drain.
  • Add three tablespoons of water to the reserved marinade and stir to combine.
  • Slice the chicken into strips.
  • Add the romaine, cherry tomatoes, red onion, avocado, cooked bacon, and chicken to a bowl and drizzle with the remaining honey mustard dressing.

1 cup sweet potato, diced
1 cup red potato, diced
1 cup red onion, chopped
1 cup brussel sprout, quartered
1 cup green beans, chopped
1 cup carrot, chopped
olive oil, to taste
salt, to taste
pepper, to taste
½ tablespoon dried thyme
1 tablespoon fresh rosemary, chopped
¼ cup dijon mustard
¼ cup honey
3 cloves garlic, minced
4 chicken thighs

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the sweet potato, red potato, red onion, Brussels sprouts, green beans, and carrots on the baking sheet in separate piles.
  • Drizzle everything with olive oil, then sprinkle with salt, pepper, thyme, and rosemary. Rub the seasoning into the vegetables until evenly coated and spread flat on the baking sheet, keeping the vegetables separate. Set aside.
  • In a small bowl, combine the mustard, honey, garlic, salt, and pepper, and whisk until smooth. Set aside.

3/4 cup Dijon honey mustard salad dressing
1/3 cup chicken broth
1/3 cup half-and-half cream
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
4 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons olive oil, divided
1/2 pound medium fresh mushrooms, thinly sliced
1 large sweet onion, halved and thinly sliced

Steps:

  • In a small bowl, combine the first 5 ingredients; set aside. Place flour in a shallow bowl. Add chicken, a few pieces at a time, and toss to coat; shake off excess. In a large skillet, heat 2 tablespoons oil over medium-high heat. Brown chicken on both sides. Remove from pan. 6 bone-in chicken thighs (about 2-1/4 pounds)
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 medium lemons
1/3 cup olive oil
1/3 cup honey
3 tablespoons Dijon mustard
4 garlic cloves, minced
1 teaspoon paprika
1/2 cup water
1/2 pound fresh green beans, trimmed
6 miniature sweet peppers, sliced into rings
1/4 cup pomegranate seeds, optional

Steps:

  • Preheat oven to 425°. Place chicken in a greased 15x10x1-in. baking pan. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Thinly slice 1 lemon; place over chicken. Cut remaining lemon crosswise in half; squeeze juice into a small bowl. Whisk in oil, honey, mustard, garlic and paprika. Pour half the sauce over chicken; reserve remaining sauce for beans.
