I usually make bread in the bread machine. One night, when I didn't have time for the bread machine, I used my kitchen aid mixer recipe book and modified their recipe for 60-minute rolls. The result --homemade bread and biscuits in less than 60 minutes!

1/2 cup skim milk
1/4 cup sugar (or less depending on preference)
3 (1/4 ounce) packages active dry yeast
2 teaspoons salt
3 tablespoons butter substitute
1 1/2 cups warm water
5 cups all-purpose flour

Steps:

  • Heat milk, sugar, salt, and butter substitute in small saucepan until butter melts and sugar dissolves.
  • Cool to lukewarm.
  • Dissolve yeast in warm water in warmed mixer bowl.
  • Add milk mixture and slowly add flour.
  • Mix for 1-2 minutes on speed 2.
  • Place in greased bowl, turning to grease top.
  • Cover and let rise next to warm oven for 10 minutes.
  • Put dough in greased loaf pan and leftover dough in greased muffin pans.
  • Let both pans rise in oven (170 degrees) for 10 minutes.
  • Bake at 425 degrees (12 minutes for biscuits and 25-30 minutes for bread).

1 c self-rising flour
1 c whipping cream
1/2 stick melted butter

Steps:

  • 1. Preheat oven to 400 degrees. Grease a baking pan.
  • 2. Sift flour into mixing bowl. Add whipping cream and mix with fork until well blended.
  • 3. Turn mixture onto floured surface and coat well. Coat hands with flour to prevent dough from sticking while rolling into shape. Pinch off dough mixture to the size biscuits you want, I use a ball size that fits into the palm of my hand. Roll dough in a circular motion and flatten with hand. Place onto baking pan. Continue until all dough is used. *You may also roll the dough out and cut with a biscuit cutter for even size.
  • 4. Place in oven and bake until bottoms are lightly brown then turn oven to broil. You MUST watch them closely at this point until tops are the brown color you want them, they will burn quickly. Remove from oven.
  • 5. While biscuits are still hot, brush melted butter on top for added flavor.

Momma usually cooked biscuits three times a day when she wasn't working outside our home. Daddy was a farmer, worked hard, loved biscuits and hated cornbread! I sure miss the "good old days" around the farm.

2 1/2 cup(s) self rising flour, sifted
1 1/3 cup(s) buttermilk
6 tablespoon(s) crisco shortening, melted

Steps:

  • Grease baking pan or iron skillet with shortening. Mix flour, shortening and milk to the right consistency - add milk or flour whichever is needed. Drop by heaping tablespoons on greased pan. Use wet fingers to pat smooth the top of each biscuit. Bake 475 for 10 to 15 minutes. Check for doneness at 10 minutes since ovens vary. Serve hot with your favorite butter and jelly.
  • Years ago my mom used a wooden carved out bread bowl. She used the bread bowl to mix biscuits with her hands, forming the biscuits by hand and baking them in an iron skillet. She used extra flour or water on her hands to keep them from sticking to her hands.

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup shortening
3/4 to 1 cup milk

Steps:

  • Add all the dry ingredient together in a bowl or food processor and mix together. Add the shortening and use the metal blade on the food processor until the mixture is crumbly or mix by hand, with a fork or with a pastry cutter until the shortening is fully incorporated in little pieces. Next add just enough milk to bring the mixture together. Stir by hand or pulse in the food processor. Once it forms a ball it's done, don't over mix. Homemade biscuit dough ready to be shaped and cut. Flour your hands, rolling pin and counter and drop the dough on the counter, with your hands bring it together to form a ball and knead once or twice if you need to bring the dough together more. Roll from the center out until the dough is your desired thickness. Generally about ½ inch thick is good. And use a small, 2 inch cookie cutter to cut out the biscuits. Give the cookie cutter a gentle twist against the counter to help it cut through the dough. Place the biscuits on a parchment paper lined cookie sheet to flash freeze or a greased cookie sheet to bake. Gather extra dough and re-roll it to the same thickness as before then cut more biscuits. Repeat until you use all the dough. Bake at 450° for 8-12 minutes until golden brown and flaky. FREEZING: Freeze on a parchment paper lined cookie sheet for an hour or two, just until the biscuits are solid then place in a freezer quality plastic bag. Label, date and add to your freezer inventory sheet. Use within 6 months. Frozen biscuits that can go right in the oven. THAWING AND REHEATING: Cooked biscuits can be thawed in the fridge or on the countertop. They can also be placed in the microwave for a few seconds or in the oven for a few minutes to reheat. Frozen biscuits that are uncooked can be baked from frozen or thawed in the fridge. Add about 50% cooking time for frozen items, thus at 450 they should take 12 minutes or so. Check them after 10 minutes but allow up to 15 minutes to bake.
